  • Preheat oven to 375°. In a small skillet, heat oil over medium-high heat. Add onion; cook and stir until tender, 3-4 minutes. Add garlic; cook 1 minute longer. Cool slightly., In a large bowl, combine bread crumbs, cheese, eggs, seasonings and onion mixture. Add turkey and beef; mix lightly but thoroughly. Shape into 1-1/2-in. balls., Place meatballs on a rack coated with cooking spray in a 15x10x1-in. baking pan. Bake until lightly browned and cooked through, 18-22 minutes. If desired, serve with pasta and pasta sauce.

Boy am I glad I did. They are so good! Grandma Maroni's Meatballs and Maroni Sauce 100 Year Old Recipe image

Steps:

  • For the meatballs:.
  • Preheat oven to 350°F Spray a baking sheet with olive oil cooking spray.
  • Mix chuck, bread crumbs, eggs, milk, Romano, onion, garlic, parsley and basil thoroughly in large bowl. If mixture seems a little loose add more bread crumbs.
  • Roll meatballs loosely about the size of a golf ball and place on baking sheet. Place into preheated oven for approximately 35 to 40 minutes.
  • To make the sauce:.
  • In a medium saucepan over medium heat, add oil. Once heated add the finely sliced garlic and onions to the pan. Cook over medium heat until soft and slightly brown. Next add the canned crushed tomatoes, salt and pepper and stir. Allow the sauce to come to a simmer and cook for 20 minutes. Remove from the heat and add the julienned basil.
  • Simmer meatballs in sauce for about 10 minutes, and then serve over al dente pasta. YUM!

GRANDMA'S ITALIAN MEATBALLS

This recipe is from my Italian grandmother. The one change she made to get with the times was to use Ragu sauce instead of homemade, and she declared that it still tasted just as good. It's never failed to impress the people I make it for. My husband says these meatballs have forever ruined him to other people's, or even restaurant meatballs. The real secret is in the time you take to slowly cook the meatballs in the sauce. Don't skimp and just toss the sauce on and eat it. It will still taste good, but not anything like it should be. The raisins are meant to absorb the acidity and impart a little sweetness to the sauce. This recipe can easily be multiplied to feed more people.

Steps:

  • Mix ground beef, garlic, bread crumbs, egg, basil, parmesan cheese, and parsley until combined. Do not overwork meatball mixture.
  • Make golfball size meatballs with meatball mixture.
  • Brown meatballs in a frying pan over medium heat, or bake at 375 degrees F for about 10 minutes, until cooked through.
  • Combine browned meatballs in a pot with sauce and raisins.
  • Cook covered, simmering gently over low heat, for at least 3 hours and up to 5 hours, stirring gently occasionaly.
  • If sauce becomes too thick over the course of cooking, a small amount of water can be added to thin it.
  • Serve over spaghetti, on rolls, or however your heart desires.

Steps:

  • Mix ground chuck, evaporated milk, onion soup mix, bread crumbs, and 1 tablespoon Worcestershire sauce together in a bowl. Refrigerate for 1 hour. Form approximately 40 small meatballs and place on a baking sheet.
  • Set the oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Broil meatballs until just browned, 2 to 3 minutes. Turn meatballs over and continue broiling until browned on other side, about 2 minutes more.
  • Transfer meatballs to a slow cooker.
  • Combine ketchup, brown sugar, port wine, and 1 tablespoon Worcestershire sauce in a saucepan over medium heat. Cook and stir until dissolved, about 2 minutes. Pour over the meatballs in the slow cooker. Cook on High until meatballs are no longer pink in the middle and the sauce is thick, at least 1 hour.

Steps:

  • Soak the breadcrumbs in the milk until the milk is absorbed (use a good sized bowl that is big enough to hold the other ingredients).
  • Add the meat, salt, pepper, allspice, ginger, onion and egg, mix til well blended.
  • Bring 2 quarts of water to a boil, add some salt.
  • Roll the meat mixture into golfball (or a bit smaller) sized balls.
  • Drop the balls into the boiling water and cook covered for 15 minutes.
  • Meanwhile heat the oven to 350F and in a saucepan combine the brown sugar, broth & melted butter, stir & heat until the sugar is dissolved and forms a glaze.

Now, my Grandmother, being German, not Italian, we’re not talking about the spaghetti and tomato sauce type of meatball…these are more like Swedish meatballs, in a creamy mushroom sauce, and they are killer. I like them with a some mashed potato and green beans…for me that is the ultimate comfort food. Hope you enjoy them! Recipe Overview and Keys to Success To make the best Meatballs, make sure you do these few things:
  • Use a combination of beef and pork. The two meats have different texture and flavors, and the combo is much better than each individually Make sure you cook off a tester meatball, before rolling out the full batch. Taste that tester for seasoning and texture, and then you can adjust your whole mix, before making all the meatballs. When adjusting the meatballs, add more salt/pepper/soup mix for flavor, and egg/bread crumbs for a softer texture Finally, I like to heat the mushroom soup before pouring over the meatballs, and then cooking them at high temp (~400 degrees or so) so the soup reduces, and the you get some crunchy edges.
