- Let cool completely, then split in half and remove any uncooked dough from center. Fill with Grammy's Cream Puff Filling and dust with powdered sugar.
- Pour heavy whipping cream into a mixer fitted with the whisk attachment. Add powdered sugar and vanilla extract. Beat on high speed until light and fluffy, about 10 minutes. Transfer to a pastry bag fitted with a round tip.
THE ONLY ICE CREAM RECIPE YOU'LL EVER NEED
This silky, luscious and very classic custard can be used as the base for any ice cream flavor you can dream up. These particular proportions of milk and cream to egg yolk will give you a thick but not sticky ice cream that feels decadent but not heavy. For something a little lighter, use more milk and less cream, as long as the dairy adds up to 3 cups. You can also cut down on egg yolks for a thinner base, but don't go below three. Then flavor it any way you like. See the chart here for more than 16 flavor ideas. Or invent your own.

Steps:
- In a small pot, simmer heavy cream, milk, sugar and salt until sugar completely dissolves, about 5 minutes. Remove pot from heat. In a separate bowl, whisk yolks. Whisking constantly, slowly whisk about a third of the hot cream into the yolks, then whisk the yolk mixture back into the pot with the cream. Return pot to medium-low heat and gently cook until mixture is thick enough to coat the back of a spoon (about 170 degrees on an instant-read thermometer).
- Strain through a fine-mesh sieve into a bowl. Cool mixture to room temperature. Cover and chill at least 4 hours or overnight. Churn in an ice cream machine according to manufacturers' instructions. Serve directly from the machine for soft serve, or store in freezer until needed.

- Tin Roof Ice Cream. Tin Roof brings together vanilla ice cream with hot fudge and peanuts in a perfect trifecta. David Lebovitz turns the classic parlor treat into an extra chocolatey riff on fudge ripple.
- Pista Kesar Kulfi (Pistachio and Saffron Kulfi) Add-ins like finely ground pistachios and a pinch of saffron give this creamy Indian ice cream flavor bomb a floral, earthy finish that’ll keep you coming back for more.
- Blackberry and Chocolate Ice Cream Icebox Cake. Ribbons of blackberry jam in the fluffy whipped cream give this traditional icebox cake a fruity twist, plus chocolate ice cream and a graham cracker crunch to take it to the next level.
- Bourbon Butterscotch Ice Cream. A caramelly combo of butter and brown sugar drives the flavor in this creamy treat. A shot of bourbon gives it a boost, but it would still be a delicious ice cream if you want to skip the booze.
- No-Churn Almond and Raspberry Swirl Ice Cream. FYI: You can achieve a creamy ice cream texture without an ice cream machine. Just whip heavy cream with chilled sweetened condensed milk before freezing, like in this nutty, no-churn ice cream recipe.
