SLOW-COOKER HOT CHIPPED BEEF AND CHIPOTLE DIP
Not just for cowboys, packaged dried beef makes a wonderful starter for this dip, with smoky adobo chiles, toasted pecans, and melted Monterey Jack cheese.

Steps:
- In medium bowl, combine cream cheese, Monterey Jack cheese, onion, mayonnaise, garlic powder and chiles; mix well. Stir in dried beef. Spoon into 1 or 1 1/2-quart slow cooker.
- Cover; heat on Low setting 1 1/2 to 2 hours.
- Just before serving, sprinkle pecans over top. Dip can be kept warm in slow cooker for up to 1 hour. Serve with crackers or cocktail bread.
CHIPPED BEEF DIP
This is an easy cold dip that my husband begs me to make every holiday. I originally got the recipe from my mother-in-law, and I substituted chives for the green onion since I am allergic to onions. They can be added back into the recipe if desired. I serve this with celery sticks, baby carrots, sliced peppers, and crackers.

I got this chipped beef dip from a neighbor several years ago. Served with crackers, it makes a great snack. I also serve it with raw veggies as an appetizer or on crusty bread with a salad for a light meal. - Slice the top of the bread off.
- Using a knife cut out the inside (being careful not to cut all the way through the bread). Cut the hollowed out bread and the cut off top into bite sized squares.
- Put in a sealed container.
- Mix the rest of the ingredients together and put in the bread "bowl" on a platter.
- Arrange the bread squares around the bowl.
- I always buy extra bread for dipping.
- Don't forget to eat the bowl too.
- All of this can be made days ahead and the dip actually is BETTER after several days.
