- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a fluted tube pan (such as Bundt®).
- Sift flour, baking soda, cinnamon, and salt together in a bowl. Set aside.
- Mix sugar, egg, and oil together in another bowl. Stir in the flour mixture just until combined; fold in apple, walnuts, and raisins.
- Bake in the preheated oven until a toothpick inserted into the cake comes out clean, about 1 hour.

- Preheat oven to 350°. Coat a 13x9-in. baking pan with cooking spray., In a large bowl, beat sugar, eggs, applesauce, oil and vanilla until well blended. In another bowl, whisk flour, baking soda, cinnamon and salt; gradually beat into sugar mixture. Fold in apples and pecans., Transfer to prepared pan. Bake 35-40 minutes or until top is golden brown and a toothpick inserted in center comes out clean. This is a favorite of my late grandma's recipes. She passed away a year ago October 27 and I am just now able to look at her cookbooks and make what I call my memory food. This is a very simple cake and is delicious iced or not. Enjoy!

GRANDMA LORRAINE'S APPLE ANGEL FOOD CAKE
Steps:
- Place apples in large bowl with 1 can soda and 1 1/2 cups water. Let sit for 5 minutes.
- In a large skillet over medium heat melt butter. Add brown sugar, molasses, maple syrup, cinnamon and salt. Stir until sugar has dissolved and starts to simmer. Add apple brandy, pecans, raisins and apples. Reduce heat to low and let simmer for about 15 minutes or until apples are tender and liquid has reduced to a syrupy consistency.
- Slice angle food cake into wedges and top each slice with apple mixture.
THE APPLE LADY'S APPLE CAKE (GATEAU AUX POMMES DE LA REINE DES POMMES)
Steps:
- Preheat the oven to 400 degrees F.
- Butter a 9-inch springform pan and set it aside.
- In a large bowl, combine the flour, sugar, baking powder, and sea salt, and stir to blend. Add the vanilla extract, eggs, oil, and milk, and stir until well blended. Add the apples and stir to thoroughly coat them with the batter.
- Spoon the mixture into the prepared cake pan. Place the pan in the center of the oven and bake until fairly firm and golden, about 25 minutes.
- Meanwhile, prepare the topping: In a small bowl, combine the sugar, egg, and melted butter, and stir to blend. Set it aside.
- Remove the cake from the oven and pour the topping mixture over it. Return the cake to the oven and bake until the top is a deep golden brown and the cake feels quite firm when pressed with a fingertip, about 10 minutes.
- Transfer the cake pan to a rack and allow to cool for 10 minutes. Then run a knife around the sides of the pan, and release and remove the springform side, leaving the cake on the pan base. Serve at room temperature, cut into thin wedges.

POTATO PANCAKES WITH CHUNKY GRANNY SMITH APPLESAUCE AND CINNAMON CREME FRAICHE

- On a box grater, coarsely shred the onion and potato. Transfer to a colander or wrap in a cheesecloth sling, and squeeze as dry as possible. Let stand for 2 minutes, then squeeze dry again. Put the potatoes in a large bowl, add the flour, salt, pepper, baking powder and egg, and gently fold to combine.
- In a large cast-iron skillet, heat 2 tablespoons oil until shimmering. Drop heaping tablespoons of the potatoes into the skillet and flatten them with the back of the spoon. Cook the pancakes over moderately high heat until the edges are golden, 1 1/2 to 2 minutes. Flip and cook until golden on the bottom, about 1 minute. Drain on paper towels. Repeat with the remaining potatoes, adding more oil to the skillet as needed.
- Serve the potato pancakes topped with Chunky Granny Smith Applesauce and a small dollop of Cinnamon Creme Fraiche.
- Cook's Note: Reheat the pancakes in a single layer on a cookie sheet in a 400 degree oven until they're crisp again. If you undercooked them a bit or didn't get the browning on them you'd hoped for, you can compensate for this in the oven.
- To a large pot, combine 1 cup water, sugar, cinnamon, lemon zest, and apples. Bring to a boil over medium heat and cook until soft, 8 to 10 minutes. Taste for sweetness and add more sugar if desired. Coarsely mash to a chunky consistency. Let cool to room temperature.;
- Whisk together creme fraiche and cinnamon, cover and refrigerate for at least 30 minutes to allow the flavors to meld.;

- Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch tube pan.
- In a large bowl, combine flour, 2 cups sugar, baking soda, salt and cinnamon. Make a well in the center and pour in the eggs, oil, orange juice and vanilla. Mix well. Stir in the chopped apple, nuts and coconut. Pour into prepared pan.

- NOTE: You may adjust spices according to spices in apple butter if the butter is particularly strong flavored or extra light flavored.
- Preheat oven to 350°.
- Grease and flour a 13 x 9 inch baking pan or 3 coffee cans or 2 loaf pans.
- Into large bowl, measure all ingredients except raisins and nuts.
- With mixer at low speed, beat until well-mixed, constantly scraping bowl with spatula.
- Beat at high speed for 3 minutes, occasionally scraping bowl.
- Stir in raisins and nuts.
- Pour batter into pan or divide equally between coffee cans or loaf pans.
- Bake for 40 to 45 minutes (longer for coffee cans).

- Preheat oven to 350°. Let egg yolks stand at room temperature for 30 minutes. Starting 1/2 in. from 1 end, cut apple halves lengthwise into 1/4-in. slices, leaving them attached at the top so they fan out slightly. GRANDMA'S FRESH APPLE CAKE
Moist cinnamon cake enfolding sliced fresh apples makes a delicious dessert or wholesome snack cake. This recipe came from my mother, Ann. I have cut the sugar down to 1 cup, as most modern apples are sweet enough to not need the original 2 cups called for. I like to replace 1 cup of all purpose flour with 1 cup whole wheat flour.

- Sprinkle sugar over apples in your largest mixing bowl. Sift dry ingredients together twice, then add to apples. Add remaining ingredients, and stir until well mixed. Batter will be very thick.
