GREAT VALUE SUGAR COOKIE
This is the sugar cookie recipe found on Wal-Mart's brand, Great Value, sugar bag. Hands down - this is the BEST sugar cookie recipe I've ever tried! Rather than rolling out these cookies and using cookie cutters, I form the dough into a log, cover with cling wrap and freeze. To bake, just slice 1/4" thick! *Preparation time does not include chilling time *Number of servings depends upon size of cookie shapes

GRAM OPAL'S SUGAR COOKIES
My grandma, Opal June Carlson (Gram C), made these cookies whenever my dad and I came to her cottage on Lake Okoboji for a visit. Although at the time I picked off the pecan halves that my 7-year-old self didn't yet appreciate, these simply delicious cookies were amazing and will live forever in my heart along with my Gram C!

Steps:
- 1. Arrange the racks in upper and lower thirds of the oven and preheat the oven to 375°F. Get out 2 large cookie sheets and line with parchment paper. Place some white sugar sprinkles in a small bowl.
- 2. Prepare dough: Cream the butter and sugar in the bowl of an electric mixer until fluffy, about 5 minutes. Add the vanilla, baking soda and salt and beat at medium speed until incorporated. Add the egg and beat until incorporated. Add the flours and mix at low speed until blended, scraping down the bowl once or twice.
- 3. Scoop up enough dough to form into a 1-inch ball, rolling between the palms until smooth. Roll the dough ball in sugar sprinkles and then place on the prepared baking sheet. Repeat, arranging a dozen coated dough balls evenly spaced on each sheet and then, using a drinking glass, press on dough balls to flatten to about 1/4 inch thick.
- 4. Bake cookies about 12 minutes, switching and rotating the pans half way through, until cookies are golden and somewhat firm to the touch. Transfer cookies with a metal spatula to racks and let cool completely. Repeat with remaining dough.

Steps:
- Cookies: Cream sugar and margarine (or butter). Mix in egg and flavoring. Into another bowl, mix dry ingredients. Mix the dry ingredient mixture into the sugar and magazine (butter) and egg mixture. Form 2 big balls and flatten in between wax paper for 2-3 hours in the refrigerator. You can use a rolling pin to roll out the dough. This helps when you are using a cookie cutter for shapes. The dough is much easier to work with after being in the fridge. Heat oven at 350. For decoration, you can add sprinkles to the cookies before you bake them and they will bake into the cookies. If you want icing, wait for the cookies to cool after baking. Bake for 8-9 minutes. If you are making thinner cookies, check the cookies at 6 minutes. Frosting (use store bought icing for a quick alternative): Beat ingredients in a electric mixer. Change proportion of ingredients to get proper consistency.
BASIC SUGAR COOKIES
The easy-to-handle dough in this basic sugar cookie is perfect for rolling and cutting. It holds its shape well during baking, tastes great, and the flavor can be changed according to whim: Swap out the vanilla and try adding orange zest, lemon zest, finely chopped rosemary or almond extract. You can also give these cookies a radical makeover by decorating them with icing. A few drops of gel food coloring turn them into Color-Field Cookies; red stripes transform them into Peppermint Stripe Cookies; or a sprinkle of pomegranate seeds and pistachios create Abstract Art Cookies. Rubber spacers on your rolling pin are especially helpful here: They'll help you roll the dough to an even thickness, resulting in beautiful, uniform cookies.

Steps:
- Combine flour, baking powder and salt in a medium bowl, and whisk to combine. Set aside.
- In the bowl of a stand mixer fitted with the paddle attachment, cream together butter and granulated sugar on medium-high speed until light and fluffy, 2 to 3 minutes. Add egg and vanilla, and beat on medium speed until well combined, scraping the bowl as needed.
- Add flour mixture and beat on low speed just until combined. Scrape the bowl and fold a few times to make sure everything is well combined. Wrap dough in plastic wrap, flatten into a disk, and chill until firm, at least 1 hour.
- Heat oven to 350 degrees. Roll out dough 1/4-inch thick. Use 3-inch floured cutters to cut out cookies, and transfer to two parchment- or silicone mat-lined baking sheets, spacing the cookies about 1 1/2 inches apart. Reroll scraps as needed, chilling as needed until firm before rolling and cutting again. Freeze until very firm, about 10 minutes.
- Bake until golden brown at the edges, 12 to 14 minutes.
- Let cool a few minutes on the baking sheets, then transfer to wire racks to cool completely. Cookies will keep in an airtight container at room temperature for up to 2 weeks, or frozen up to 3 months.
