Steps:

  • Preheat the oven to 450 degrees F. Cut the bulbous end off the squash and reserve for another use. Remove the stem, then peel the remaining squash and cut in half crosswise. Using a spiralizer, shave the squash into ribbons.
  • Put the squash on a baking sheet and toss with the oil. Sprinkle generously with salt and pepper and roast until tender but still firm, 10 to 15 minutes.
  • Meanwhile, heat 1 tablespoon butter in a large skillet over medium heat until melted. Add the prosciutto in a single layer and cook until golden and curled around the edges, flipping with tongs halfway through, about 2 minutes per side. Transfer to a plate to cool, then coarsely crumble.
  • Add the remaining 5 tablespoons butter to the drippings in the skillet along with the sage leaves and a pinch of salt, and cook, stirring often, until the butter is a dark brown color, about 4 minutes. Remove from the heat.
  • Put the squash on a serving platter and drizzle with the butter and sage leaves. Top with the Parmesan and coarsely crumbled prosciutto. Serve immediately.

1 large butternut squash (about 3 pounds)
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
6 tablespoons unsalted butter, cut into cubes
2 ounces thinly sliced prosciutto (about 4 slices)
5 fresh sage leaves
1/2 cup shaved Parmesan (about 2 ounces)

SPAGHETTI WITH ROASTED BUTTERNUT SQUASH

Garlic takes on a mild and somewhat sweet flavor when roasted, and in this dish you roast the garlic and the butternut squash at the same time. It's a good way to use squashes that come into season in the fall.

SPAGHETTI WITH BUTTERNUT SQUASH AND PARMESAN SAUCE

This recipe was adapted from skinnytaste.com. The photo looked so good, I had to make it. I tweaked it a bit and I didn't have leeks, so I used onion instead. But If you have leeks, I would suggest that you use them (I will next time). It was one of the most delicious pasta dishes I have ever eaten. Hope you like it too.

FOR PASTA WITH BUTTERNUT SQUASH AND SAGE, BROWN BUTTER IS KEY
The secret is pasta water, the starchy cooking liquid left in the pot after your pasta is done cooking. It's the extra starch that does it. A few splashes of pasta water added to the browned butter as you toss it with the pasta adds just enough starch to keep the emulsion stable. That is, if there's enough starch in your pasta water to begin with.
