GREEK MARINATED SEA BREAM

Steps:
- Cut the sea bream into very thin slices and marinate with the salt, sugar, lemon juice, chili and spring onions for about 10 minutes.
- Place the sea bream on a plate, sprinkle with fresh spring onions and olive oil. Serve.

SEAWEED-MARINATED SEA BREAM

- Prepare the fish: Sprinkle 2 teaspoons salt on all sides of the fish. Cover in plastic wrap and chill for 1 hour. Rinse well, then pat dry.
- Place the kombu in a large bowl of warm water. Soak until soft, about 5 minutes, and pat dry. Lay the fish flat on the kombu, then fold the kombu over the fish and cover in plastic wrap. Chill for 6 to 12 hours.
- Prepare the dipping sauce: In a small bowl, mix all of the ingredients and season with pepper. Set aside.
- Unwrap the sea bream and discard the kombu. Using a very sharp knife with the blade lying flat, horizontally slice the sea bream as thinly as possible. Arrange the slices on a platter.

GREEK MARINADE FOR SHRIMP/SEAFOOD
This would also be a great marinade for poultry. This is simple, quick and quite tasty!! Please allow time for marinading, as it isn't included in the prep time. Cavender's All Purpose Greek Seasoning includes salt, pepper, oregano, garlic, onion powder, parsley, flavor based seasoning and 5 other spices not listed. I would recommend grilling the shrimp and using the marinade to baste the shrimp during the initial cook time. This marinade will easily cover/marinade 1 1/2 lbs shrimp.

- Scale and gut the fish. Make a lengthwise incision in the center of the fish (where the main bone is located) on both sides. Rinse well to remove any remaining scales or blood from the fish. Then tap dry all-around using paper towels.
- Place fish on a plate and drizzle with olive oil. Rub the olive oil all over the fish (so it won't stick when cooked). Season with kosher salt on both sides, inside the incisions, the belly, and its head as well.
