- Heat olive oil in a large heavy saucepan over medium heat. Saute shallots until softened. Stir in onion and bacon, and cook until bacon is evenly browned. Stir in garlic when bacon is about half done. Remove from heat.
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Drain pasta, then return it to the pot.
- In a medium bowl, whisk together egg yolks, cream, and shredded Parmesan. Pour the bacon mixture over the pasta, then stir in the cream mixture. Season with salt and pepper.

- In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 1 tablespoon in pan., Meanwhile, in a Dutch oven, cook fettuccine according to package directions. Drain; return to pan., Add onion to drippings in skillet; cook and stir over medium heat 2-3 minutes or until tender. Add garlic; cook 1 minute longer. Reduce heat to medium-low. Stir in cream. In a small bowl, whisk a small amount of warm cream into eggs; return all to pan, whisking constantly. - Drain well, reserving 1/2 cup pasta cooking liquid (water).
- Meanwhile, heat olive oil in heavy large pot over medium-high heat.

- Preheat the oven to 375 degrees F.
- Heat 2 tablespoons of olive oil in a medium saute pan over medium-high heat. Add the peppers and cook until soft, about 12 to 15 minutes. Sprinkle with the sugar and continue cooking for 2 more minutes. Stir in the capers and basil, and season, to taste, with salt and pepper. Set aside.
- Slice the baguette crosswise into 18 thin round slices. Brush the bread rounds lightly with olive oil on 1 side. Arrange them in rows, oil side up, on a sheet pan lined with parchment paper and toast in the oven until lightly browned, about 7 to 10 minutes.

- Cook fettuccine in large pot of boiling salted water until just tender but still firm to bite. Drain well; return pasta to pot.
- Meanwhile, add 1 1/4 cups whipping cream and cheese to mushroom mixture. Simmer gently over medium heat until cheese melts, stirring occasionally, about 4 minutes. Stir in chives, parsley and basil. Add sauce to pasta; toss to coat. Season pasta to taste with salt and pepper. Transfer to bowl and serve.
GORGONZOLA FETTUCCINE
I made this recipe when I was dying of a hangover and had a fridge full of cheese. It was worth every calorie.

- Put a large pot of water on the stove to boil. While the water heats up, crumble the cheese and butter into a large bowl along with the garlic, spinach and a very generous crack of pepper. When the water has boiled, add a large pinch of salt and cook the pasta until aldente.
- When the pasta is cooked, add a ladle of the pasta water to the bowl with the ingredients for the sauce. Drain the pasta, add it to the bowl and toss vigorously until the cheese and butter has melted, generously coating the pasta.
- To serve, pour the pasta into a large serving bowl and top with the ball of buratta and a drizzle of olive oil (or if you're fancy like me, make it truffle oil). The real masterpiece is breaking into the ball of buratta and mixing it through the pasta, it's a thing of beauty.

Easy and fast recipe to make. We love it here at home. It's not the most healthy dish, but once in a while you should allow yourself to sin. We eat this easily with just the 2 of us. However, just add some more pasta and there should be enough for 2 adults and 2 kids. Especially if you serve it with some salad on the side.

- Bring water for the Penne pasta to a boil. Meanwhile, dice the courgette, and cut the bacon into small pieces. Remove the crust of the Gorgonzola and crumble into pieces
- Add the pasta into the boiling water and cook according to the instructions (Usually, takes about 12-15 minutes). Fry the bacon in a hot frying pan until the bacon pieces separate from each other. Don't fry them crispy. Add the courgette and fry for a few minutes over a medium heat.
- Pour in the double cream and add the cheese. When all the cheese has dissolved in the cooking cream, let it all simmer on a low heat until the courgette is almost done. I like mycourgette al dente. Add freshly ground black pepper to taste.
- If your pasta isn't done yet but your sauce is, just remove the sauce from your stove and reheat if needed before adding it to the pasta.
- After draining your Penne stir in the sauce and you're ready to enjoy your meal
SPAGHETTI ALLA CARBONARA: THE TRADITIONAL ITALIAN RECIPE
This dish was created in the Lazio region (the area around Rome) in the middle of the 20th century, after World War Two. We don't use cream, milk, garlic, onions or other strange ingredients; we use only guanciale, eggs, pecorino cheese, and lots of black pepper (carbonaro is the Italian for coal miner). - Cook the pasta in a large pot of boiling salted water until just el-dente; drain.
- Reserve and set aside about 1/2 cup pasta water.
