A very good light summer dish. I serve it with sliced tomatoes, feta cheese, and garlic bread.

Steps:

  • In a glass dish, mix the olive oil, garlic, rosemary, thyme, oregano, and lemon juice. Place the chicken pieces in the mixture, cover, and marinate in the refrigerator 8 hours or overnight.
  • Preheat grill for high heat.
  • Lightly oil the grill grate. Place chicken on the grill, and discard the marinade. Cook chicken pieces up to 15 minutes per side, until juices run clear. Smaller pieces will not take as long.

GREEK SEASONED SMOTHERED CHICKEN

This recipe comes from a restaurant that I worked at a few years ago. The cook told me how he makes it. I'm sure there are other versions of this but I LOVE this one! No salt or additional spices are needed, the seasoning I used has plenty of flavor. I don't really measure anything in this recipe, you pretty much put your preferences, but then there really isn't any measuring needed. This meal is great with a salad and garlic bread. ENJOY!

Greek Seasoned Smothered Chicken image

Steps:

  • Sprinkle Cavender's seasoning on each piece of chicken, front and back. Do not over season, as the flavor may be too strong, but adjust according to your tastes.
  • Slice mushrooms, peppers and onion. Brown veggies in butter, to desired doneness, set aside.
  • In skillet, heat oil and butter on medium heat and brown the chicken breasts coated with seasoning. Cover and cook slowly until done. Heat may have to be adjusted down to allow cooking all the way through without burning.
  • When chicken is cooked, top each piece with the vegetable mixture.
  • Top each chicken piece with 1 or 2 slices of provolone cheese.
  • Heat on low until cheese is melted.

  • Combine lemon juice, olive oil, parsley, garlic, and oregano in large plastic food storage bag.
  • Pierce chicken with fork several times and sprinkle with salt and pepper.

Steps:

  • Chop the onion for this recipe along with the onion for the rice dish.
  • Heat a nonstick skillet until it is very hot. Reduce the heat to medium high, and add oil.
  • Add all the onion, and saute until the onion begins to brown.
  • Mince garlic; remove1/3 of onion from pan, and add to rice (see rice recipe). Add garlic to remaining onion, and stir.
  • Wash, dry and cut chicken into bite-size chunks, and add to onion; brown chicken on both sides.
  • Grate lemon rind, and add to pan with the vermouth and cinnamon and 1/4 cup chicken broth. Cover, and cook over low heat until the chicken is cooked through.
  • Stir the remaining tablespoon of chicken broth into the cornstarch, and mix to a smooth paste; stir into pan. Then, add the yogurt, and stir to mix well. Season with salt and pepper.

This Delicious dish was a real winner. I came up with it by combining 2 chicken recipes that I had. Fancy without a great deal of work! You can reduce the fat content by not using the olive oil and herbs on the outside, then when serving don't eat the skin! Also, it is just as yummy if you omit the ham. Haven't tried it without the feta, but I imagine that would be good as well.

Steps:

  • Preheat oven to 325.
  • Brush chicken with oil.
  • Combine oregano, parsley, garlic powder, and garlic salt.
  • Rub onto chicken.
  • Combine spinach, feta, ham, bread, pine nuts, chives, butter, and pepper.
  • Slip fingers in between skin and breast, and Lightly stuff the pockets on both sides.
  • Lightly spoon stuffing into main cavity and neck, if desired.
