SMOKY GARLIC HUMMUS DIP
Smoked paprika, charred scallions and sweet piquillo peppers are tempered by the richness of chickpeas and toasted almonds in this easy yet sophisticated dip that dresses up your typical store-bought hummus. Make it before your guests come and just top it when they arrive. If you can't find piquillo peppers, you can easily use a jar of any roasted red pepper.

Steps:
- Preheat the oven to 350 degrees F. Spread the almonds on a baking sheet and toast until light brown and fragrant, 7 to 10 minutes. Transfer the almonds to a bowl and reserve. Turn the oven up to broil. Toss the scallions with the oil and some salt and pepper on the baking sheet. Broil until the scallions are charred and black in spots but not burned, stirring halfway through, about 2 minutes. Let the scallions cool, then chop them and reserve.
- Stir the hummus, smoked paprika, cayenne and half of the peppers together in a medium bowl until well mixed. Spread the mixture into a 2-quart earthenware crock and smooth the top.
- Scatter the scallions, almonds, parsley and remaining peppers on top in stripes alternating red and green. Sprinkle with additional smoked paprika and drizzle with a little olive oil. Serve with warm pita.

- In a medium, microwave safe bowl, mix cream cheese, chili without beans and diced tomatoes with green chile peppers.
- Microwave cream cheese mixture on high 1 minute. Remove from microwave, stir and repeat until the mixture is hot and thoroughly blended.

- In a large bowl, combine mayonnaise and cheeses. Add the chiles, corn and pimientos; mix well. Pour into a lightly greased 2-qt. baking dish. Top with olives. , Bake, uncovered, at 325° for 25-30 minutes or until edges are bubbly. Serve with tortilla chips. Refrigerate leftovers.

ROASTED GREEN CHILI HUMMUS
I LOVE Green Chilis and I love to experiment with Hummus. You can put pretty much any flavor into garbanzo beans and make a great healthy dip. After a few experiments, this recipe rocks!

Steps:
- Boil garbanzo beans in salted water for 10-12 minutes. Drain and place into food processor.
- Add remaining ingredients. Blend until smooth.
- If it does not become smooth enough for your taste, add additional water, olive oil, or lime juice - depending on the flavor you desire.
- Add Salt and Pepper to taste. Pulse to mix through.
- If you like a bit more heat than the green chili gives, add a bit of jalapeno or serrano pepper. Whatever you do -- please -- don't add canned diced chilis. The vinegary canned flavor does not go well with the garbanzo beans.
- Serve with warm soft pitas or crispy pita chips.

- In a saucepan, add the chickpeas and baking soda and cover with about an inch or two of water. Bring to a low boil for 20 minutes. Skim off any skins that float to the top and then drain in a fine-mesh sieve. Discard any obvious chickpea skins you see but don't feel like you need to get them all. Rinse the chickpeas well to remove any residual baking soda.
- In a food processor, combine garlic, lime juice, tahini and olive oil. Blend into a mostly smooth paste. Add the green chiles, cilantro, cumin, coriander and salt and blend until smooth. Then, add the chickpeas and blend again until smooth. Taste. Add more salt if necessary to suit your taste but if you do, add a small amount at a time. The hummus may look a little thin at this point.
- Refrigerator for a few hours to allow the flavors to meld and the hummus to chill and thicken. Stir before serving. If desired, garnish with more green chiles, olive oil and cilantro. Enjoy!

- In a food processor, blend lime juice, garlic powder, salt, cumin, chili powder, black pepper, cayenne pepper, and tahini until creamy.
- While food processor is running, add 2 tablespoons ice water. Blend until very smooth and creamy.
- Add the chickpeas or white beans, and blend until very smooth. Add the can of green chilis and cilantro, and pulse until well-mixed, but the chilis and cilantro are not completely blended up. Taste and adjust salt, cayenne pepper as necessary. Add 1-2 tablespoons of water if you'd like it to be a thinner dip.
- Serve with tortilla chips, pita bread triangles, crackers, or a veggie tray. Keeps well in the fridge and tastes even better after the flavors have mingled a few hours.
