Steps:

  • Stir together warm water and sugar in a measuring cup, then sprinkle yeast over mixture and let stand until foamy, about 10 minutes (If yeast doesn't foam, discard and start over with new yeast.
  • Stir together flour (3 3/4 cups) salt, and baking powder in a large bowl. Stir together yogurt, egg, and oil in a small bowl. Make a well in center of flour mixture and add yeast mixture and yogurt mixture, then stir in flour mixture gradually with a wooden spoon until dough just comes together.
  • Knead dough on a lightly floured surface with floured hands, lightly reflouring work surface and your hands when dough becomes too sticky, using no more than 1/4 cups flour, until dough is smoother, soft, and elastic, about 10 minutes. Transfer dough to a lightly oiled large bowl and cover bowl with plastic wrap. Let dough rise in a draft-free place at warm room temperature until doubled in bulk, 1 1/2 to 2 1/2 hours.
  • Make Topping While Dough Rises: Put oven rack with pizza stone in lower third of oven and preheat oven to 450 degrees (heating pizza stone will take about 1 hour).
  • Coarsely grate onion on largest holes of a box grater and drain well in a sieve. Cook onion and sesame seeds in oil in a 10-inch heavy skillet over moderate heat, stirring occasionally, until onion is just beginning to turn golden, about 12 minutes. Transfer to a bowl and cool to room temperature.
  • Turn dough out onto a lightly floured surface without punching down. Cut dough into 2 pieces and trasfer 1 piece to parchment lined pizza peel or baking sheet. (Keep remaining piece of dough covered with plastic wrap).
  • Flatten dough with lightly oiled fingertips, patting and gently stretching into an 11 to 12 inch round.
  • Spread half of onion mixture over round, then poke holes through dough all over with skewer.
  • Slide bread, along with parchment, onto pizza stone. Bake until golden brown, 10 to 12 minutes. Remove bread to a rack and discard parchment. While first flatbread is baking, make another bread on another sheet of parchment, then bake in same manner. Serve flatbreads warm.

Sesame Flank Steaks with Grilled Green Onions image

Steps:

  • Place steaks in shallow nonreactive dish, which will hold them comfortably in a single layer.
  • In small bowl, whisk together vinegar, soy sauce and 6 tablespoons of the sesame oil.
  • Pour marinade over the meat.
  • Cover and refrigerate 6 hours or overnight, turning several times.
  • When ready to cook, lightly oil grill rack and arrange 5 inches from heat source.
  • Cut off root ends and all but 4 inches from green stems of green onions.
  • Place onions in shallow dish and brush all over with remaining 2 tablespoons of the sesame oil.
  • Set aside.
  • When grill is hot, remove steaks from marinade.
  • Lightly pat dry with paper towels.
  • Place steaks on grill and cook 5 to 6 minutes per side for medium-rare.
  • When done, place on platter and cover lossely with aluminum foil to keep warm.
  • Grill green onions, turning them until slightly charred, 3 to 5 minutes.
  • To serve, slice meat diagonally across the grain into 1/4-inch-thick slices.
  • Arrange meat and grilled onions on serving platter and season with salt to taste.
  • Sprinkle with sesame seeds.
  • Note: To toast sesame seeds, place them in medium skillet over medium heat.
  • Toast, stirring, until seeds are golden brown, 3 to 5 minutes.
  • Remove and cool.

  • Heat grill to high and dust a non-stick baking sheet with a little flour. Mix the self-raising flour, sesame seeds, a pinch of salt and a grind of black pepper in a large bowl. Stir in the natural yogurt and milk or water, then mix well to form a soft dough.

Steps:

  • Preheat oven to 425°F. Line 12 muffin cups with foil muffin liners. Melt 2 tablespoons butter in heavy small skillet over medium heat. Add green onions and sauté until beginning to soften, about 1 minute. Add remaining 4 tablespoons butter and stir until just melted. Remove from heat.
  • Mix cornmeal, flour, sugar, 1/4 cup toasted sesame seeds, baking powder, salt and baking soda in large bowl. Make well in center. Add buttermilk, egg and onion mixture to well. Mix into dry ingredients.

Steps:

  • Tip the flour into a large bowl and add 1 tsp salt. Add the yogurt, 2 tbsp water and the sesame seeds, then mix to make a dough (it'll be quite wet). Flour the work surface and tip out the dough. Divide into six pieces. Working with one ball at a time, and keeping the others covered with a tea towel, roll into flatbreads about 0.5cm thick.
  • Heat a large griddle or frying pan until really hot. Brush one flatbread with oil, then put in the pan, oil-side down. Cook for 2-3 mins each side until bubbles appear on the surface and the underneath is brown. Turn over and cook for another 2 mins, then transfer to a plate. Continue cooking the remaining flatbreads. Wrap them in foil and keep warm in a low oven until ready to serve, or serve at room temperature.
