ALL-PURPOSE GREEN SAUCE

This tangy, creamy sauce is the perfect home for all those extra herbs you may have on hand from other recipes - that leftover sprig of mint, the stemmy part of that bunch of cilantro, the droopy basil. You can use any combination of soft herbs here; you'll need two packed cups altogether. And you don't have to limit yourself to herbs. Other flavorful, leafy options include arugula, celery leaves or pea shoots. For a vegan version, skip the yogurt and use more olive oil, along with a small squeeze of lemon for some acidity.

All-Purpose Green Sauce image

Steps:

  • Place herbs, garlic and pepper in a food processor or blender, and pulse to combine, stopping to scrape down the sides of the container if necessary.
  • Add yogurt and purée until smooth. (This may take a minute or so; scrape down the sides of the container as needed.) With the motor running, gradually drizzle in the olive oil. Pulse in lemon zest and salt. Taste and add more salt if needed.
  • Use immediately or refrigerate in an airtight container for up to 5 days. Spoon over grilled or roasted chicken, seafood (especially shrimp and salmon), sausages, steaks, lamb chops and vegetables. Use as a marinade for chicken, lamb or pork; as a dressing for starchy salads with beans, potatoes or grains, or for hearty vegetable salads, like those with cucumbers or blanched and sliced sugar snap peas or green beans. Serve as a dip for crudité or chips. Spread in roast beef, lamb or pork sandwiches.

1/4 cup plain Greek yogurt or sour cream

Steps:

  • Chop the herbs and garlic, mixing with 1 tsp sea salt, until very fine.
  • Add the mustard and capers, and combine. Transfer the mixture to a bowl and stir in the olive oil.
  • Add the vinegar, little by little, stirring and tasting as you go - trust your palate!

Steps:

  • Pulse miso, lemon juice, lime juice, oil, tahini, vinegar, and honey in a food processor or a blender until miso is dissolved and mixture is smooth. Add cilantro, chives, ginger, and coriander and pulse until herbs are finely chopped; season with salt and pepper.
  • Do Ahead
  • Sauce can be made 3 days ahead. Cover and chill.

3 tablespoons white miso
3 tablespoons fresh lemon juice
2 tablespoons fresh lime juice
2 tablespoons olive oil
4 teaspoons tahini
1 tablespoon apple cider vinegar
1 tablespoon honey, preferably raw
2 cups cilantro leaves with tender stems
1/3 cup sliced chives
1 1/2 teaspoons grated peeled ginger
1 teaspoon ground coriander
Kosher salt, freshly ground pepper

Just like the Mexican Restaurants around here. I like my green sauce creamy, the tomatillos in this recipe keep the avocado from going brown for a couple days in the fridge. It doesn't usually last that long!

Steps:

  • Remove husks and stems from tomatillos. Place whole tomatillos in a sauce pan, cover with water and bring to a boil. Boil 5 minutes or until easily pierced with a fork. Drain the water and allow to cool.
  • Place tomatillos, onion, cilantro, jalapeno, and salt in a food processor or blender. Blend until smooth.
  • Stir in sour cream and avocado and blend again until smooth.

  • Add everything, except the capers, and only half of the water to a food processor and process to the kind of texture you want. You can serve this sauce smooth or chunky. To keep it chunkier it's better to pulse the food processor rather than run it on full power. If you want it really, really smooth then you could use a high powered blender instead.
  • Add the remaining water gradually, pulsing in between additions until you get the thickness you want.
  • Add the capers and pulse again a few times to break them up into small pieces. Little chunks of them are nice so don't obliterate them.
  • Season with salt and pepper to taste. Go easy on the salt and taste as you go because the capers are quite salty. It's best to stir it in unless you don't mind the sauce getting blended a bit more.
