CAPRESE SALAD WITH PROSCIUTTO AND FRIED ARTICHOKES

Steps:
- Mix the flour with 1/4 teaspoon each salt and pepper in a large bowl. Add the artichoke hearts and toss. Heat the olive oil in a large skillet over high heat. Add the artichoke hearts and fry until golden brown and crisp, about 3 minutes per side. Transfer to a paper towel-lined plate to drain. Remove the skillet from the heat and reserve the frying oil.
- Season the tomatoes with salt and pepper. Divide the mozzarella, tomatoes, prosciutto and fried artichokes among plates. Top with the basil and olives and drizzle with some of the reserved frying oil.

- Cut each prosciutto slice crosswise in half. Spread each piece with about 1 teaspoon cheese; wrap around an asparagus spear., Place on an oiled grill rack over medium heat, seam side down. Grill, covered, until prosciutto is lightly browned, 6-8 minutes, turning once.

- Toss 2 peaches (cut into wedges) with 2 teaspoons white balsamic vinegar and a pinch each of sugar, salt and pepper. Let stand 10 minutes. Spread 1 1/2 cups baby arugula on a platter and top with the peaches. Top with a 4-ounce ball torn burrata and 2 ounces torn prosciutto. Drizzle with olive oil; sprinkle with flaky salt, pepper, torn mint and chopped chives.

- Whisk together the lemon juice and olive oil in a small bowl. Add the capers and parsley and season with black pepper. Preheat grill. Grill the asparagus, brushed with olive oil. Toss the asparagus with the olive oil and season with salt and pepper to taste. Wrap a piece of prosciutto around each spear and place on a platter. Drizzle with lemoncaper vinaigrette and top with the cheese.
GRILLED BACARA RANCH ROMAINE LEAVES WITH PROSCIUTTO, PINE NUTS AND BASIL

- In a large sauce pot with boiling salt water, blanch romaine leaves for 5 seconds and place in ice water bath. Remove and dry off surface. Layer 1 slice of mozzarella, 1 basil leaf, and toss in some pine nuts. Roll up and wrap in prosciutto. Repeat process with rest of leaves.
- Marinate in olive oil and cracked black pepper. Reserve for grill. Grill lightly until cheese is soft and serve.

- Preheat grill to medium-high heat.
- Liberally brush grill with olive oil to prevent sticking.
- Wrap each nectarine wedge with one half slice of prosciutto and secure with a bamboo skewer.
- Brush with melted butter and place on the grill for 2-3 minutes or until prosciutto starts to brown.
- Meanwhile, place lime wedges on grill for 2-3 minutes.
- Remove limes and nectarines when brown.
- To serve, squeeze fresh lime juice over nectarines and sprinkle with chopped mint.
