Steps:
- Put 2 slices of bread on a cutting board or work surface. Top each with two slices of cheese, the apple slices, a third slice of cheese and another piece of bread. Press down lightly.
- Heat 1 tablespoon butter in a large skillet over medium-low heat. Add the sandwiches and cook until the bread toasts and the cheese is slightly melted, 3 to 5 minutes. Flip with a spatula and add the remaining tablespoon of butter to the pan. Cook until the other side is toasted and the cheese is melted, about 3 minutes more, adjusting the heat as needed to keep the bread from burning before the cheese melts.?
CHEDDAR & CHUTNEY GRILLED CHEESE
Steps:
- Lay 6 slices of the bread on a cutting board and brush each slice generously with the butter. Turn the slices over and spread each one with 1 1/2 tablespoons of the chutney. Place 1/2 cup of the Cheddar evenly on each slice and place the remaining 6 slices of bread on top of each sandwich. Brush the tops generously with melted butter.
- Heat a panini press (see Cook's Note) and grill the sandwiches according to the directions for the machine, until the bread is nicely browned on both sides and the Cheddar is starting to melt.
- Place the sandwiches on a cutting board and cut each one in half diagonally. Serve hot.

- Preheat a skillet over medium heat. Mix the butter, mayo and smoked paprika in a small bowl until well combined. Sprinkle with salt and pepper.
- Lightly butter one side of each of the bread slices with the mayo mixture. Add the cream cheese to the remaining mayo mixture and mix well to combine. Spread some of the cream cheese mixture on the other side of each of the bread slices.
- Distribute the Cheddar on the cream cheese-side of 4 of the bread slices. Place the remaining 4 bread slices on top. Place the sandwiches in the skillet and cook until golden on the bottom, about 3 minutes. - Combine cheeses in a bowl.
- Brush top side of each bread slice with melted butter. Flip 4 slices over, sprinkle with cheese and compact lightly with hand. Cover with remaining bread slices, buttered side up.
- Heat large nonstick skillet or griddle over medium-low heat for 1 minute.

CHAKALAKA AND CHEDDAR BRAAIBROODJIES (GRILLED CHEESE SANDWICH)
These grilled cheese sandwiches are typically truly grilled, meaning they are thrown on an outdoor grill over open coals, and are usually served as a sort of snack after a big barbecue (known as a braai in South Africa). They're a perfect midnight snack and the best way to make use of still-hot coals if you get a second wave of hunger after you've eaten a meal and the party is still going. The liberal spoonful of Chakalaka (Spicy Vegetable Relish) makes these extra special. If you don't have a jar of it in your fridge, you can use any type of relish or chutney. Since we don't want you to have to wait until you have an outdoor grill going just to make these, we simply call for a hot cast-iron pan. The mayonnaise spread on the outside of the sandwiches means every single bit of the bread will get browned and caramelized (remember, mayonnaise is basically just oil).

Stir in the bell peppers, carrots, cabbage, and tomatoes. reduce the heat to medium-low and cook, uncovered, giving the mixture a stir every so often, until all the vegetables are tender and most of the liquid has evaporated, about 30 minutes. Turn off the heat, stir in the vinegar, and season the chakalaka to taste with salt. Let the chakalaka cool to room temperature and season it to taste one final time. Serve immediately or store in an airtight container in the refrigerator for up to a week, then serve it either cold or at room temperature.
GRILLED CHEDDAR AND APPLE BUTTER SANDWICH
This is an adopted recipe that I found to be a nice twist on the traditional grilled cheese. The original chef's comments are as follows: "For some reason, I put a jar of apple butter in my grocery cart today (childhood nostalgia?)...I can't imagine I'm the only one in the world to come up with this, but I dreamt it up today, and I didn't see it on Zaar...so here it is! My 13-month-old daughter ate it right up and literally screamed for more! I used mild Tillamook cheddar cheese, but I think a sharp white cheddar would be amazing, too. Take care to toast it *s l o w l y* neglected (burnt) grilled sandwiches that are "scraped off" and presented scraped-side-down on the plate, are a dirty trick IMHO."
