Steps:
- Mix all ingredients except chicken until blended; pour over chicken in shallow dish. Stir to evenly coat chicken. Refrigerate 30 min. to marinate.
- Heat grill to medium heat. Drain chicken; discard marinade. Thread chicken onto skewers.
- Grill 20 min. or until chicken is done, turning occasionally.

Really delicious chicken tikka and just like you get at Indian restaurants or possibly better! Very healthy too! Garnish with sliced onion and lemon wedges. Serve with steamed rice or naan. Can also be made on the grill.

- Combine chilies, cilantro, yogurt, tomato paste, ginger paste, garlic paste, tikka masala, food coloring, and salt in a glass or ceramic bowl. Add chicken and marinate in the refrigerator for 2 hours, up to overnight.
- Preheat the oven to 350 degrees F (175 degrees C). Line a cookie sheet with aluminum foil and spray with cooking spray.
- Bake chicken in the preheated oven for 10 minutes; flip and spray with cooking spray. Continue to bake until chicken is no longer pink in the centers and juices run clear, 5 to 10 minutes more. Turn on the oven's broiler. Broil until browned, 3 to 5 minutes more.

CHICKEN TIKKA MASALA
Chicken tikka masala is meant to be rich and buttery. Chef Saran begins by marinating chicken in yogurt with ginger, garlic, cayenne, and garam masala before simmering it in cream with cinnamon and other spices.

- Peel and chop onion, garlic, and ginger. Place in a food processor along with the yogurt, cayenne and garam masala. Process until smooth. Combine the marinade with the chicken and refrigerate at least 1 hour and up to overnight.
- Preheat oven to 350 degrees F. Once chicken has marinated, place in a single layer on a drip tray set over rimmed baking sheet (or a foil-lined baking sheet). Bake 15-20 minutes. Meanwhile, make the sauce: Peel and cut the onion into large chunks, peel and chop the ginger, and smash the garlic with a knife to remove the skin. Place the onion, ginger, and garlic in a food processor and puree, then set aside. In a medium saucepan over medium heat, add oil, followed by the cinnamon stick. Add onion mixture and stir. Add a teaspoon of salt and continue stirring.
- Continue cooking for 20 minutes until the mixture turns a light golden brown. Keep a cup of water beside the stove while the onion cooks. When the onion begins to stick, add water, about 1 teaspoon at a time, and scrape the bottom of the pan to pull up the brown bits and keep the onion from burning. Add turmeric, coriander, cumin, and cayenne; mix and cook for a minute or two. Add a bit more water and continue stirring. Stir in tomato puree and season to taste with salt. Stir in the cream, turn off the heat and set aside.
- Place cooked chicken into the sauce and gently mix in the pan over low heat. Mince cilantro stems, sprinkle on top, and serve.

This is a recipe that I developed from a mixture of recipes, adapting to our tastes. I hope you enjoy it :) Time to make doesn't include time to marinate. Cooking time is an estimate, depending on how hot your grill is and how big your chicken cubes are. :)

- Clean your chicken, and cut it into cubes for threading on skewers.
- Take a fork and prick the chicken many times.
- Put lemon juice in bowl with chicken, stir well, and set it aside.
- In a large bowl, mix yogurt, garlic, ginger, cumin, turmeric, cayenne, salt and pepper.
- Place the chicken in the bowl with the marinade, and marinate for at least 2 hours, preferably 4-6 hours.
- Thread chicken onto skewers.
- Heat your grill with a nice flame and place chicken skewers on the grill.
- Brush with butter or olive oil, and grill approximately 6 minutes on each side, or until done, having nice grill/char markiings.
- Once you have grilled one side for 6 minutes, turn them over and brush with butter or olive oil, and grill 6 more minutes or until done.
- Serve with lime wedges on the side for squirting on chicken pieces; YUM!

- For the marinade: In a large bowl, mix together the marinade ingredients. Add the chicken and toss to coat. Marinate at least 30 minutes, or in the refrigerator up to overnight.
- For the sauce: When you're ready to make the curry, place a large skillet over medium heat and add the olive oil and butter. When the butter has melted, add the Ginger-Garlic Paste and serrano peppers. Saute until lightly browned around the edges. Add the tomato paste and cook until the tomato has darkened in color, about 3 minutes. Add the garam masala and the paprika and saute for about 1 minute to draw out their flavors.
- Add the tomatoes, salt, and 1 cup water. Bring to a boil, turn down to a simmer, and cook until thickened, about 20 minutes. You may need more water depending on how much liquid the tomatoes give off.
- Meanwhile, fire up your grill. When it is nice and hot, lightly brush it with oil. Place the chicken on the grill, shaking off some of the excess marinade. Cook until it's charred, about 2 minutes on each side. (Don't worry that the chicken will still be a little uncooked, it finishes cooking in the sauce).
- Pour the sauce into a blender or food processor, or use an immersion blender, and process until smooth. Pour back into the skillet and bring back up to a boil. Add the chicken and fenugreek leaves, if using. Take the heat down to a simmer and cook for about 10 minutes. Add the cream and stir through. Garnish with minced fresh cilantro, and serve over rice, with naan, or a crusty piece of bread!
- Throw the garlic, ginger, and canola oil in a mini-food processor and let it go until it forms a semi-smooth paste. There will still be tiny little pieces in there, but overall, it should resemble a paste.
- Save what you don't use in a small glass jar. It should last in the fridge for 2 to 3 weeks. It's a delicious addition to marinades, pasta sauces, stir fry sauces, slow-cooker recipes, gravy etc. We always had a jar of this stuff in our fridge growing up.
SPICY CHICKEN TIKKA MASALA, GRILLED VERSION
This is an awesome dish to make for company if they like chicken with heat. I would suggest doubling the sauce and serving with nan and basmati rice. I have also used low fat & FF yogurt and it works beautifully.

- Marinade:.
- Combine yogurt, lemon juice, cumin, red pepper, black pepper, cinnamon, salt and ginger in a medium bowl or zip lock bag. Stir in chicken. Marinate for one hour.
- Soak wooden skewers (can use metal) in water for at least 30 minutes prior to grilling.
- Thread chicken on skewers and discard marinade.
- For Sauce: (double).
- Melt butter in a large deep skillet over med/low heat. Add garlic and jalapeno, cook 1 minute.
- Stir in: coriander, cumin, paprika, garam masala and salt.
- Stir in tomato sauce, simmer 15 minutes.
- Remove from heat until 5 minutes before chicken is done grilling.
- Stir in whipping cream, simmer until sauce thickens, about 5 minutes.
- Meanwhile: heat grill to medium high or heat broiler. Grill or broil chicken, turning until done and no longer pink, about 8 minutes.
- Remove chicken from skewers and set aside. Add to sauce, simmer 5 minutes, and serve over Basmati rice.
GRILLED CHICKEN TIKKA - ROB RAINFORD
I saw this on Food Network Canada and it has been on my to do list ever since. The original recipe calls for thighs but I would use breasts and have updated the recipe to reflect this.

- Combine chicken lemon juice and salt in a large bowl and toss until the chicken is well coated. Place the chicken and the remaining liquid into a large plastic bag.
- In another bowl, combine yogurt, almonds, ginger, garlic, paprika, garam masala, turmeric, pepper & cayenne. Mix well and pour over the chicken. Toss and coat the chicken in the mixture. Close the bag and place it in the fridge to marinate for 4 hours up to overnight.
- Place some bamboo skewers into water and leave to soak for 30 - 45minutes.
- Remove the chicken from the refrigerator ½ hour prior to cooking time. Leave it to come to room temperature.
- Preheat the grill to medium high heat.
- Place two or three pieces of chicken on each bamboo skewer. Oil the grill grate and then place the skewers down in a way that the skewers are off the heat and the chicken is on. Cook with the lid up for 7 to 8 minutes per side.
