GRILLED FETA QUESADILLAS
This is a great appetizer, especially when having company over for a barbecue. I had something similar at a Memorial Day party and I tried to recreate the flavor with lower fat ingredients. -Jacqui Correa of Landing, New Jersey

- In a small bowl, beat cheeses with oregano until blended. Spread 3 tablespoons of cheese mixture over half of each tortilla; top with olives, pimientos and onion. Fold tortillas over., Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Grill quesadillas, uncovered, over medium heat or broil 4 in. from the heat for 1-2 minutes on each side or until golden brown. Cut each quesadilla into three wedges. Serve warm.

GRILLED CHICKEN QUESADILLAS
Steps:
- 1.Prepare grill for medium heat. 2.Spread each tortilla evenly with cream cheese. 3.In small bowl, combine chicken, chilies, shredded cheese, bell pepper and onion; mix well. Spoon evenly over each tortilla. Fold each tortilla in half, pressing to seal. 4.Brush both sides of each quesadilla with oil. Grill 2 minutes on each side or until golden brown. 5.Cut quesadillas into wedges; serve with favorite Mexican toppings such as sour cream, guacamole and salsa.
FETA QUESADILLAS
These yummy quesadillas are an interesting blend of Greek and Mexican flavors. They're quick and easy and make a nice appetizer for a BBQ party. Adapted from a Better Homes magazine. You could use 1/2 tsp. dried oregano in place of the fresh but I don't recommend it.

Steps:
- Stir together the cream cheese, Monterey Jack cheese, feta cheese and oregano.
- Spread 1/4 of the filling onto one half of each tortilla; top with olives, pimiento and green onion; fold plain side over filling; press gently to seal edges.
- Grill filled tortillas on the rack of an uncovered grill directly over medium heat for 1-2 minutes on each side or till golden brown and heated through.
- Cut each quesadilla into three wedges and serve warm.
GRILLED QUESADILLAS WITH FETA, SPINACH, AND OLIVE-LEMON RELISH
DH and I enjoyed these meatless quesadillas last night for dinner. They come from my Bobby Flay "Boy Gets Grill" cookbook. The relish, I found, has an especially nice lemony zing. I substituted Kalamata olives for the "oil-cured black olives" as that is what I had on hand and I love Kalamata! I served with Recipe #426403 426403, which we really enjoyed.

- For the relish: Mix the onion, olives, zest, vinegar and oil together. Season to taste with salt and pepper. (The relish can be made a few hours in advance, covered, and kept refrigerated. Bring to room temperature before serving).
- For the Quesadillas: Heat your grill to medium. Place 8 of the tortillas on a flat work surface. Divide the cheeses and spinach among the tortillas and sprinkle with salt and pepper. Make 4 quesadillas by stacking the filled tortillas by twos, then placing one of the remaining plain tortillas on top. Brush the tops of the quesadillas with olive oil. Carefully place them oiled side down on the grill and cook until golden brown on the bottom, about 2 minutes. Carefully turn the quesadillas over with a large metal spatula, close the grill cover, and continue cooking for 1 to 2 minutes, until the cheese has melted and the tortillas are crisp. Remove the quesadillas from the grill and cut into quarters for serving. Top each quarter with a spoonful of relish. Serve immediately.

- In a bowl, mash beans along with 1/2 cup of the salsa with a potato masher.
- Spread mixture evenly over the 4 tortillas leaving a 1/2 inch border.
- In this order sprinkle mixture with onions, olives, coriander and, finally, cheese.
- Fold tortillas over and press to seal.
- Place on greased grill over medium-high heat and cook, turning halfway through, for 8 tp 10 minutes or until browned and crisped.
- Garnish with rest of salsa.

- Place the chicken on a plate, and sprinkle with adobo seasoning on both sides. Let it marinate for 15 minutes.
- Heat grill for medium-high heat.

- Place half of the tortillas on the grill, and drop a quarter-cup of cheese in the center of each. Spread cheese as close to edges as possible.* Place a second tortilla on top of each.
- Grill until bottom tortilla is lightly browned and cheese begins to melt, about 1-2 minutes. Flip and continue cooking until browned on the other side.
- Cut into quarters and serve with salsa, sour cream, and guacamole.
