MARINATED TURKEY BREAST
This recipe came from my mother. These always turn out juicy and tender no matter how long my husband leaves them on the grill! Easy to prepare, but it's always best when marinated for at least 4 hours.

Steps:
- In a small bowl, mix together the garlic, basil, and pepper. Rub over the turkey breasts. Insert one clove into each end of the turkey breasts, and one in the center.
- In a large shallow dish, blend vegetable oil, soy sauce, lemon juice, and brown sugar. Place the breasts in the dish, and turn to coat. Cover, and marinate in the refrigerator at least 4 hours.
- Preheat grill for high heat.
- Lightly oil the grill grate. Discard marinade, place turkey breasts on the grill. Close the lid, and grill turkey breasts about 15 minutes on each side, or to an internal temperature of 170 degrees F (68 degrees C).

3 PEA FRIED RICE

Steps:
- In a wok, coat with canola oil and add garlic and ginger. Cook until soft and add rice. Mix well then add eggs, chives and English peas. Heat thoroughly. Check for seasoning. Toss snow and snap peas with vinaigrette. Check for seasoning.
- Mix all ingredients well.
JERK PORK LOIN WITH AMY'S CHORIZO FRIED RICE JICAMA SLAW AND FRESH ORANGE SYRUP
Steps:
- For the brine: Place the pork in a shallow dish. In a bowl, combine salt, sugar and water until dissolved. Pour over pork (should be submerged). Cover and store in refrigerator overnight.
- Rinse the pork off and dry.
- For the marinade: In a food processor, puree cilantro, parsley, scallions, kaffir, garlic, ginger and orange peel. Add a little of the oil if necessary. Add the spices and chiles and puree. Add the hoisin and juice and while the machine is running, add the oil in a steady stream. Check for seasoning. It will not be very salty, since there is no added salt, but should be very fragrant with a little kick. Take out 2 tablespoons marinade and reserve. Marinate pork overnight.
- On a hot grill, cook pork, criss-crossing on both sides. Brush with the reserved 2 tablespoons of marinade during grilling. Total cooking time will be 12 to 14 minutes.
- For Amy's chorizo fried rice: In a dry skillet on medium heat, toast all the dry spices until fragrant. Let come to room temperature then mix with garlic and pork. Season with salt and pepper. Make sure to mix really well. Let stand for 2 hours in the refrigerator before using.
- In a wok or large skillet, coat with oil and sear the chorizo over high heat. Break up the chorizo into small pieces and cook about 5 minutes until browned. Add the rice and scallion whites and heat through. Check for seasoning.
- For the slaw: In a bowl, combine all and check for seasoning.
- For the syrup: In a non-reactive pan, reduce juice and ginger by 80 percent until a syrup is achieved. Scrape into a blender and while running, drizzle in the oil. Season and check. Store in the refrigerator.
- Plating: Place a mound of fried rice in the center of a plate and top with 1 pork chop. Top that with jicama and drizzle orange syrup on pork and plate. Garnish with scallion greens.
MARINATED TURKEY BREAST
Steps:
- Mix all ingredients of the marinade in a large plastic bag. Place turkey breast in a large plastic bag and marinate in the refrigerator overnight. Remove turkey, and transfer marinade to a small saucepan, bring to a boil. Grill turkey breast, basting with reserved marinade, until the temperature registers 175 to 180 degrees, about 35 to 45 minutes for a 5-pound bird.
- Transfer turkey to a cutting board and slice crosswise. Arrange slices onto a platter, spoon boiled marinade over the turkey slices.
TEA SMOKED BRAISED BOAR WITH SPAM-PINEAPPLE FRIED RICE

- Place the boar in a bamboo steamer. Line wok with foil and mix tea, rice and sugar together and place on foil. Place the bamboo steamer over the wok. Cover and seal with wet towel. On low heat, smoke the mixture for 20 to 30 minutes then turn off heat and let stand for 20 more minutes. Meanwhile, in a stock pot coated with oil, saute the onions, carrots, celery and garlic. Add the smoked boar. Season and add the soy, sugar, wine, and water, to cover. Check for seasoning and bring to a simmer. Simmer for 1 1/2 to 2 hours until meat is extremely tender. Right before serving, add the greens to wilt. In a wok or large saute pan, coat lightly with oil and saute the scallion whites and add the Spam and pineapple. Add the rice and season. Plating: In large bowl, place a mound of fried rice and top with boar. Garnish with scallion greens.
TRADITIONAL MANDARIN FRIED RICE
It is recommended to use day-old rice so that the drier rice can soak up the flavors.

- In a wok, add 2 tablespoons of oil and quickly soft-scramble the eggs. Remove the eggs. In the same wok, coat with oil and stir-fry garlic and ginger. Add white scallions and lapchang. Add rice and mix thoroughly. Add soy sauce, white pepper and scrambled eggs. Check for seasoning. Serve immediately.

- Make marinade in a large bowl.
- Check for seasoning.
- Marinate turkey breast for at least 6 hours or overnight. (One can speed up the marination process by slicing the breast into 4 to 6 long, thin slices.) Season the marinated breast and grill on low grill, 20 to 25 minutes. If it is a large breast, butterfly it so that it will cook through, if necessary, finish in a 350 degree oven.
- Let rest for 15 minutes before slicing.

THE ABSOLUTE BEST CHICKEN OR TURKEY WITH MARINADE
This has to be the best tasting grilled chicken or turkey that I have ever had. I usually marinate overnight to really get the flavor in the meat, but you can do it for a couple of hours if you need. I wouldn't.
