ADOBO SIRLOIN

Juicy top sirloin marinated in a spicy chipotle chile sauce. This meat is great by itself, but could also make great fajitas!

Adobo Sirloin image

Steps:

  • In a small bowl, mix the lime juice, garlic, oregano, and cumin. Stir in chipotle peppers, and season to taste with adobo sauce.
  • Pierce the meat on both sides with a sharp knife, sprinkle with salt and pepper, and place in a glass dish. Pour lime and chipotle sauce over meat, and turn to coat. Cover, and marinate in the refrigerator for 1 to 2 hours.
  • Preheat grill for high heat.
  • Lightly brush grill grate with oil. Place steaks on the grill, and discard marinade. Grill steaks for 6 minutes per side, or to desired doneness.

Steps:

  • Lay the skirt steak in a large nonreactive bowl or baking dish.
  • Combine the oil, soy sauce, garlic, lime juice, cilantro, jalapeno, red wine vinegar, cumin, sugar and 1 tablespoon each salt and pepper. Pour the marinade over the steak, making it's well coated. Cover and refrigerate for 4 to 6 hours, or overnight.
  • Preheat a grill or cast-iron skillet to high heat. Remove the steak from the marinade, sprinkle both sides with salt and pepper, and place it on the grill. (If cooking indoors, remove excess marinade, as the garlic may burn and smoke).
  • Grill the steak for just a few minutes per side, depending on thickness, until it is cooked to your preference. You may need to work in batches.
  • Transfer the steak to a cutting board and let rest for 5 minutes. Slice the steak thinly against the grain on a diagonal and serve.

1 large handful fresh cilantro, leaves and stems, finely chopped
1 jalapeno, seeded and minced
2 tablespoons red wine vinegar

1/2 teaspoon sugar
Kosher salt and freshly ground black pepper

Yes. It's hot. A good steak deserves a good bite! Jalapenos peeps,..smoked..yes some will think it's hot, to me and fellow pepper heads this is just a starter course. If you can't handle the milder sets of peppers, I'd advise you not to try this. I don't want to hear any "It's too hot! Shenanigans) It's not like there is Habaneros, Ghost Peppers or Scotch Bonnets lurking in there. Cook times approx depending on personal taste.

  • Preheat an outdoor grill for high heat and lightly oil grate.
  • Grill steak to desired taste.
