MAPLE-SOY GLAZED SALMON

A fabulous sweet and salty glaze is basted on salmon as it grills on cedar planks. The quick and easy glaze can be used on chicken and pork as well. Good quality, grade B, pure maple syrup makes all the difference.

Maple-Soy Glazed Salmon image

Steps:

  • Soak the cedar plank in water for 2 hours.
  • Preheat an outdoor grill for medium-high heat and lightly oil grate. Place the cedar plank across the grate of the grill as it preheats.
  • Season the salmon fillet with salt and pepper, and place onto the hot cedar plank skin-side down. Close the lid on the grill, and whisk together the maple syrup, soy sauce, butter, lime juice, and lime zest. Baste the salmon with the glaze, and continue cooking until the salmon flakes easily with a fork, about 10 minutes total. Serve the salmon garnished with chopped fresh chives and lemon wedges.

Grilled Salmon with soy/maple glaze image

Steps:

  • 1. Blend soy sauce & syrup in small saucepan. Simmer for about 5 minutes until thickened and reduced in volume. Set aside a couple Tablespoons to glaze finished Salmon. Allow remainder to cool to room temperature
  • 2. Pour marinade into dish large enough to hold Salmon. Place Salmon, flesh-side down, in prepared, reduced and cooled marinade. Refrigerate for about 15 to 20 minutes.
  • 3. Prepare grill with charcoal divided on 2 sides of fire box for two level cooking. Let coals become covered in ash. (15 to 20 minutes). Be sure to clean and oil grate !
  • 4. Remove Salmon from marinade and shake pepper generously over flesh. Place drained Salmon on hot side of grill. Flesh side down toward coals. After about 1 minute, carefully turn fish skin-side down, brush generously with glaze from dish and continue cooking for 3 to 4 more minutes. Move fish to cooler side of grill and turn fish flesh-side down again to finish. (About 2 minutes)
  • 5. Remove and place Grilled Salmon on serving platter and brush with reserved glaze. Add lemon slices for garnish and serve while hot.

  • In a small bowl, combine the first eight ingredients. Pour 1/2 cup into a large resealable plastic bag; add the salmon. Seal bag and turn to coat; refrigerate for up to 2 hours. Cover and refrigerate remaining marinade. , Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill salmon, skin side down, over medium-hot heat for 2-4 minutes., Transfer to a double thickness of heavy-duty foil (about 17 in. x 21 in.). Spoon some of the reserved marinade over salmon. Fold foil around fillet and seal tightly. Grill 5-6 minutes longer or until fish flakes easily with a fork. Open slowly to allow steam to escape. Brush with remaining marinade.

Grilled Salmon with Maple-Dill Glaze image

Steps:

  • WHISK together mustard, vinegar, syrup, garlic, dill weed and salt in small bowl. Gradually whisk in oil. Place 3 tablespoons glaze in a resealable food storage bag with salmon. Marinate 1 hour in refrigerator.
  • BRUSH grill pan with oil and heat over medium-high heat. Once grill is hot, place fillets, skin side up, in pan. Cook 10 to 12 minutes, turning once or until fish is opaque throughout. Place 3 tablespoons glaze in a small bowl. Brush the fillets with glaze during the last few minutes of cooking.
  • COOK vegetable blend according to package directions. Drain if necessary. Divide vegetables evenly onto 4 dinner plates. Center fillets over vegetables. Serve drizzled with remaining warmed glaze.

4 (4 oz.) salmon fillets, rinsed and patted dry
1 (16 oz.) bag frozen vegetable blend like Baby Corn Blend*
MAPLE-DILL GLAZE:
1 1/2 tsps. Dijon mustard
2 tbsps. balsamic vinegar

GRILLED GLAZED SALMON

This is by far, my favorite company meal. We eat this salmon very often. It is so tender and delicious. Everyone I have served it to has always loved it - even children. Don't be afraid of the cayenne pepper - this is not a spicy dish. The original version of this recipe actually called for more cayenne (3/4 tsp.) which you are welcome to try if you like it a bit more spicy. The salmon called for in this recipe is a whole side of a fish - do not cut up until after it is cooked. The skin acts as a moisture protector on the grill and also helps hold the fish together- it can be removed after cooking, if you prefer. Adapted from a similar recipe in Quick Cooking magazine.

Grilled Glazed Salmon image

Steps:

  • In a small bowl, combine brown sugar, melted butter, lemon juice, dill, and cayenne pepper, mixing well.
  • Pour 1/2 cup of this sauce into a small saucepan- once the fish is in its final 5 minutes of cooking time, heat this until warm and pour over cooked fish.
  • Set aside the remaining unheated sauce to use for basting the fish as you grill.
  • Place the salmon, skin side down, on a large platter and season with lemon pepper seasoning and sea salt to taste.
  • Note: If your lemon-pepper seasoning already contains salt, then don't add the extra salt.
  • Lightly brush grill grates with some oil and heat grill to medium.
  • Carefully slide salmon off of the platter and onto the grill, skin side down,using a large metal spatula to help.
  • Cover grill and cook fish, undisturbed, for 5 minutes exactly.
  • Baste liberally with the reserved basting sauce, re-cover, and cook another 10-15 minutes- basting every 5 minutes.
  • Use up all of the basting sauce (Don't forgot to heat up the 1/2 cup reserved sauce from before).
  • Fish is ready when it begins to flake and is starting to appear as if milk is seeping out.
  • Carefullly remove to a fresh,clean platter and pour the 1/2 cup sauce you had simmering on the stove over the top of the fish.
