GRILLED SALMON WITH STRAWBERRY SALSA

Its Strawberry season!!! My friend served this last weekend and everyone raved about it, said the flavors were wonderful. My hubby decided we should make this for company this weekend, and I thought I'd share my neighbor's recipe with my friends at Zaar. (I have not personally prepared this dish yet). Prep time does not include 1 hour chilling time. Cook time does not include the time to prepare the charcoal grill.

Grilled Salmon with Strawberry Salsa image

Steps:

  • ***Salsa***.
  • Mix together cucumbers, green onion, yellow pepper, cilanto and vinegar.
  • Cover and chill at least 1 hour.
  • Just before serving add strawberries.
  • ***Sauce***.
  • In small sauce pan over low heat, melt butter with garlic.
  • Stir in honey, soy sauce and lemon juice.
  • Cook 2 minutes, then set aside.
  • ***Grill***.
  • Prepare charcoal grill.
  • When coals are ready, oil a fish grilling rack.
  • Brush sauce on salmon pieces and place on well-oiled rack.
  • Place rack over coals (about 4 inches from heat).
  • Grill salmon about 4-5 minutes on each side.
  • Brush fish with sauce after turning, and again when done.
  • Place grilled fish on warm platter and top with salsa.

Grilled Salmon with a Pineapple, Mango and Strawberry Salsa image

Steps:

  • Preheat a grill to medium.
  • Brush both sides of the salmon with the olive oil. Season the salmon on both sides with the Essence, salt and pepper. Place the fish on the grill, skin side down and cook for about 3 minutes then turn the fish 45 degrees and cook for an additional 3 minutes. Turn the fish over and cook for an additional 2 minutes, or until cooked through to the desired degree of doneness.
  • Remove the fish from the grill and serve with the fruit salsa spooned over the fish. Serve immediately.
  • Combine all ingredients thoroughly.
  • In a medium non-reactive bowl, combine all of the ingredients and stir to blend. Cover with plastic wrap and allow the salsa to macerate for 20 to 30 minutes before serving.

Steps:

  • 1. Place salmon fillet on a baking sheet and use a pastry brush to brush it with a few coats of balsamic vinegar. Reserve the rest of the balsamic for later. Season salmon with a dash of salt and pepper.
  • 2. Bake salmon for 15-20 minutes until cooked to your desired level of doneness. For well done fish, you may need to add a couple of extra minutes in the oven.
  • 3. When salmon is cooked, brush a bit of the remaining balsamic vinegar over the top. Top salmon with strawberry salsa and serve immediately.
  • 4. Combine strawberries, cilantro, jalapeño, green onion, lime juice in a medium bowl.
  • 5. Add salt and pepper to taste.

Steps:

  • Combine olive oil, balsamic vinegar, Dijon mustard, salt, and pepper in a small bowl for the vinaigrette. Stir briskly to combine.
  • Brush salmon with 1 teaspoon of the vinaigrette on the cut side, and season with salt and pepper. Reserve the remaining vinaigrette.
  • Clean the grates of an outdoor grill and preheat to 375 degrees F (190 degrees C).
  • Place the salmon on a grilling mat or fish grill basket on the hot grill, skin side down. Grill for about 10 minutes. Using a turner, carefully flip the salmon, or turn the grill basket, and cook for 4 to 5 minutes more. Salmon should flake easily with a fork when done. Steps:

  • In a Large bowl whisk together all marinade ingredients and add salmon fillets. Refrigerate for 2 or more hours.
  • In a medium mixing bowl, combine all pico de gallo (salsa) ingredients EXCEPT the strawberries. Blend by gently stirring the ingredients with a rubber spatula. Cover and refrigerate for at least 1 hour, stirring once or twice. (Just before serving, add the strawberries to the pico de gallo mixture; give another gentle stir with a rubber spatula.).
  • When ready, preheat the gas grill or charcoal BBQ to 325°F/162°C Prepare the grill for indirect cooking.
  • Remove salmon fillets and discard marinade. Place marinated salmon fillets on a well-oiled fish grilling rack. Grill the fillets over briquettes (about 4 inches from fire) or over a gas flame for 9 to 10 minutes per side -- Grill until the salmon is nicely browned. Gently flip the fish and continue to grill for another 9 to 10 minutes. Transfer to a warm serving platter; let stand for 3 minutes. Top with salsa and serve immediately.

Fresh Salmon is just the best. I go fishing in Alaska once a year and bring home a fair amount. Testing different peoples recipes is great. This one is from EMERIL. I keep some of his Essence on hand at all times. The fruit salsa is so refreshing and a great summer time addition to the fish. I have not tried it on other fish but I am sure it would be great.
