GRITS AND SAUSAGE CASSEROLE
Steps:
- Preheat oven to 375 degrees F.
- Cook sausage in a non-stick skillet over medium-high heat until browned, stirring to crumble. Drain and set aside.
- Combine milk and water in a saucepan; bring to a boil over medium-high heat. Stir in grits; cover, reduce heat and simmer 7 minutes or until thickened, stirring frequently. Combine grits mixture, sausage, cheese, parsley, salt, garlic, and peppers in a large bowl; set aside.
- Beat egg whites at high speed of a mixer until stiff peaks form. Gently stir 1/4 of the egg whites into grits mixture; gently fold in remaining egg whites. Spoon mixture into a 1 1/2-quart casserole coated with cooking spray. Bake for 25 minutes or until set and lightly browned.
- Coat a medium nonstick skillet with cooking spray and place over medium-high heat until hot. Add bell pepper, and saute 4 minutes or until tender; serve warm with grits.

- Preheat the oven to 325°F.
- Cook the grits in 4 cups of salted water until done (follow package directions) Saute the sausage and onions, breaking the sausage into small pieces.
- Drain the grease from the sausage and onions.
- Add the chilies, butter, eggs, cheese and Tabasco to the cooked grits.
- Combine the sausage and onions with the grits mixture.
- Pour everything into a 9"x 13" casserole and garnish with the paprika and parsley.
- The mixture can be refrigerated for up to two days before baking (bring to room temperature before baking to use the same bake time).
- Bake at 325°F for one (1) hour.
- This also freezes well.
GRITS 'N' SAUSAGE CASSEROLE
Steps:
- In a saucepan, bring water to a boil. Slowly whisk in the grits and 1/2 teaspoon salt. Reduce heat; cover and simmer for 5 minutes, stirring occasionally., In a large bowl, combine grits, sausage and 1-1/2 cups cheese. Beat the eggs and milk; stir into grits mixture. Add the butter, pepper and remaining salt., Transfer to a greased 13x9-in. baking dish. Bake, uncovered, at 350° until a knife inserted in the center comes out clean, about 1 hour. Sprinkle with remaining cheese; bake 15 minutes longer or until cheese is melted. Let stand for 5 minutes before cutting.

MOTHER'S DAY MAKE-AHEAD SAUSAGE AND CHEESE GRITS CASSEROLE

- In a large heavy-bottomed saucepan, combine 2 cups water and the milk and bring to a boil over medium-high heat. Stir in the grits and return to a boil. Season with 1 teaspoon of salt and pepper. Decrease the heat to low and simmer, stirring occasionally, until creamy and thick, 45 to 60 minutes.
- Meanwhile, heat a medium skillet over medium heat. Add the sausage and cook, stirring occasionally to break up the sausage, until no longer pink and the meat is cooked through, 5 to 7 minutes. Remove with a slotted spoon to a paper-towel-lined plate to drain and cool slightly.
- Remove the grits from the heat and add the cheese and butter. Taste and adjust for seasoning with salt and pepper and stir to combine. Add the reserved sausage, cayenne, eggs, green onions and jalapenos and stir until well incorporated.
- Butter a large (9-by-13-inch) casserole dish. Spoon the mixture into the prepared dish. At this point, the casserole can be covered and refrigerated overnight (bring to room temperature before baking), or baked immediately.
- Bake at 350 degrees F from room temperature until bubbly and golden brown, about 1 hour. Remove to a rack to cool slightly before serving.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a large baking dish.
- Bring water to a boil in a large saucepan, and stir in grits. Reduce heat, cover, and simmer about 5 minutes, until liquid has been absorbed. Mix in 1/2 the butter and 2 cups cheese until melted.
- In a skillet over medium-high heat, cook the sausage until evenly browned. Drain, and mix into the grits. Beat together the eggs and milk in a bowl, and pour into the skillet. Lightly scramble, then mix into the grits.

- Bring water and salt to boil. Stir in grits. Return to boil, reduce heat, then cook for 4 minutes.
- In large bowl combine grits and cheese and stir until cheese is melted.
- Stir in cold milk, thyme, and garlic powder. Mix well.
- Stir in eggs, mixing well.
- Stir in sausage.
- Pour in 13 X 9 inch pan. Cover and refrigerate overnight.
- Remove from refrigerator and let stand 15 minutes. Bake at 350 degrees for 50-55 minutes.
