French Green Beans image

Steps:

  • Fill a large saucepan with water, and bring to a boil. Add a handful of salt. Meanwhile, trim the ends off green beans, discarding any that are discolored or damaged. Add to the boiling water, and blanch for 2 to 3 minutes or until crisp tender. Drain the green beans. Immediately submerge in ice water to chill and to retain their bright color.
  • Alternatively, place the green beans in a colander. Place the colander on top of boiling potatoes to steam until tender, occasionally turning to cook evenly, about 3 to 4 minutes.

Steps:

  • Snap the stem ends of the green beans, or cut them off in a big bunch with a knife if you'd prefer.
  • Melt the bacon grease in a skillet over medium-low heat. Add the garlic and onions and cook for a minute. Then add the green beans and cook until the beans turn bright green, about a minute. Add the chicken broth, chopped red pepper, salt and pepper to taste. Turn the heat to low and cover the skillet with a lid, leaving the lid cracked to allow steam to escape. Cook until the liquid evaporates and the beans are fairly soft, yet still a bit crisp, 20 to 30 minutes. You can add more chicken broth during the cooking process, but don't be afraid to let it all cook away so the onions and peppers can start to caramelize.

  • Place the chopped bacon in a large saucepan, and cook over medium-high heat, stirring occasionally, until evenly browned and crisp, 6 to 8 minutes. Remove the bacon and set aside. Drain the grease from the pan.
  • Stir the vinegar, white sugar, and brown sugar into the pan. Bring the mixture to a boil over medium heat. Drain 2 cans of green beans and add them to the vinegar mixture. Pour 2 undrained cans of beans into the mixture, and stir the bacon back into the beans. Stir lightly to combine. Sprinkle with salt and pepper to taste.
  • Bring the mixture to a boil, reduce the heat, and simmer until the sauce is thickened and the flavors have blended, about 20 minutes.

Cook, uncovered, for 8-10 minutes or until crisp-tender; drain and set aside. , In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels.   • Heat 2 tablespoons olive oil in a saucepan over medium heat. Add garlic; cook, stirring, until bubbling and sizzling, about 20 seconds. Pour in chicken broth. Bring to a boil and cook until liquid is reduced by half, 6 to 8 minutes. Stir in red pepper flakes.

  • In a large skillet, melt butter and saute onions and mushrooms until very tender.
  • Whisk in flour and sugar and vinegar until blended well.
  • Add parsley, half-n-half, and reserved bean liquid and whisk until blended.
  • Cook until slightly thickened over medium heat.
  • Stir in beans and sour cream (if using) and cook until heated through and just started to bubble-but DO NOT BOIL.

  • Clean the beans and snap into bite size length.
  • Put beans into a Dutch oven type pot.
  • Add enough water to just cover.
  • Bring to a boil.
  • Peel potatoes and dice.

  • Cook beans in boiling salted water until just tender; drain reserving liquid. Cook bacon until crisp; drain, reserving fat.
  • Return 2 tablespoons bacon fat to skillet. Blend in flour and sugar. Add vinegar and 1 cup bean liquid (adding water if necessary to make 1 cup). Cook, stirring constantly, until mixture is thickened and comes to a boil. Add onion, dill seeds, salt and pepper and cook for a minute or two.

Steps:

  • Make the sriracha mayo: In a small bowl, stir together the mayonnaise, sriracha and 2 teaspoons of the lemon juice until well combined. Set aside.
  • Bring a large pot of salted water to a boil over medium-high heat.
  • Heat a large skillet over medium heat. Add the bacon and cook, flipping as needed, until crisp, 4 to 5 minutes. Remove to a paper towel-lined plate to drain and set aside. Pour out all but 2 tablespoons of the bacon fat.
  • Return the skillet with the bacon fat to medium heat and add the peppers, garlic and onion. Cook, stirring frequently, until the vegetables are softened and slightly fragrant, about 2 minutes. Add the almonds and continue to cook until the almonds begin to brown, an additional 2 minutes. Set aside on a plate.
  • When the pot of salted water is at a soft boil, drop in the green beans and gently blanch until bright green but still slightly undercooked, 3 to 4 minutes. They will finish cooking in the skillet later.
  • Return the skillet to medium heat and add the butter. With a slotted spoon, transfer the greens beans directly from the boiling water to the hot skillet. Toss and cook for an additional minute. Just before removing them from the skillet, add the remaining lemon juice. Taste and adjust the seasoning as needed.
  • Transfer the green beans to a platter. Drizzle with the sriracha mayo, mound the sauteed veggies in the center and crumble the crispy bacon all around.

  • Fry the bacon in a large cast-iron skillet until crisp, then drain on paper towels, leaving the fat in the pan.
  • Add the onion and cook until light golden and tender, then add the flour and stir, cooking for about 1 minute.
