QUICK AND EASY GUACAMOLE
I started making guacamole this way after eating at one of my student's mom's restaurant. I absolutely loved her guacamole, so I tried to recreate it.

- Combine avocado, green onion, cilantro, seasoned salt, black pepper, garlic, and lime juice in a bowl; mash with a spoon or potato masher until mostly smooth with small chunks.

GUACAMOLE
This is one of our favorite spicy snack food recipes, and it's quick and easy to prepare when friends drop by on short notice. It also makes a great side dish for a complete southwestern-style meal. - In a large bowl, coarsely mash avocado with lemon juice. Stir in the tomato, onion, chiles, garlic and salt if desired. Cover; chill. Serve with tortilla chips.

- Peel and de-stone avocados.
- Chop avocados into smaller, manageable pieces and mash with a fork. (Or use a food processor, which gives the guac a really lovely creamy texture!).
- Push the garlic clove through a garlic press or dice it very, very finely. (An alternative is to buy ready-made garlic paste).
- Mix all the ingredients together, adjusting for personal taste: avocados, lime juice, tabasco, garlic, seasoning and any of the extras.

- Using a sharp knife, slice the avocado in half and remove pit (I find the easiest was to do this is to carefully whack the pit with a knife so that it sticks, then pull it out.) Use your knife’s tip to score avocado flesh (don't pierce the skin), making squares, then scoop it into a bowl.
- Slice the lime into wedges. Squeeze juice over avocado. Add the Worchestershire sauce, salt, garlic and red onion to the bowl.
- With a spoon (a regular dinner spoon works perfectly), stir gently until ingredients are mostly incorporated. Don't over mix! Chunky guac is happy guac.
