GUACAMOLE TURKEY BURGER
Lean ground turkey and heart-healthy avocado come together to make eating right delicious. This recipe brings a little Southwestern flavor to the mix, with salsa in the guacamole and a seasoned burger mixture. If you'd like to add cheese, a cheddar-jack or pepper-jack would be perfect. Black bean-corn salad is a great side dish.

- To make guacamole, sliced avocados in half, lengthwise. Remove the pit and discard. Scoop out the avocado flesh with a spoon into a bowl.
- Add juices, chili powder, salsa and salt and mash with a fork until nicely chunky.
- Cover with plastic and set aside. (If you want to make the guacamole an hour or so ahead of time, you can keep it fresh in its bowl in the refrigerator by pressing plastic wrap onto the surface of the guacamole so that no air reaches the avocado, which is what makes it turn brown.)
- In a bowl, combine garlic, salt, pepper, cumin and paprika until thoroughly blended.
- Brush each patty on both sides with olive and sprinkle with the seasoning blend on both sides.
- Using a skillet or grill pan, cook patties over medium-high heat, covered, about 5 to 6 minutes per side, until no pink remains. If you're adding cheese, do so for about the last 1 minute of cooking.
- Brush each bun on both sides with melted butter and warm in another skillet over medium-high heat for about 15 seconds per side, just until toasty.
- Place patties on each bun bottom, top with guacamole and other desired trimmings. Serve with a little salsa on the side.

BLT WITH SPICY GUACAMOLE

Steps:
- For the guacamole, peel the avocado and place the flesh in a bowl.
- Lightly mash with fork.
- Add remaining ingredients to taste and mix well. *Use food processor if you want a smoother guacamole.
- Cover and set aside.
- For the BLT, place a large skillet over medium-high heat and add a small amount of oil to the skillet.
- Add the bacon and cook for 2-3 minutes on each side or until crispy, then drain on paper towels.
- Spread each halve of the rolls with guacamole, followed by 2 slices of bacon, tomato slices and finish with a handful of arugula leaves and top of roll.
- Serve while bacon is still warm.

- Preheat oven to 400 degrees. Place bacon in a single layer in two 11-by-17-inch rimmed baking sheets. Cook in the oven until browned and crisp, turning over halfway through cooking time, 15 to 20 minutes. You may need to drain off some of the fat about halfway through cooking time. Transfer bacon to a paper-towel-lined pan to drain; discard fat.
- Place avocadoes in a bowl with lime juice, and mash with a fork until chunky but spreadable.
- Using a large serrated knife, split focaccia horizontally. Spread bottom with avocado mixture; layer with bacon, oven-dried tomatoes, and lettuce. Spread remaining focaccia with mayonnaise, if desired, and top sandwich. Cut into 12 squares, and serve.

- Heat a large frying pan or wok, sprinkle in the sesame seeds and toss them over a fairly high heat for about a minute until they're slightly golden. Add the oil to the pan or wok, tip in the turkey, Cajun seasoning and red pepper and stir fry for about 5 minutes until the turkey turns from pink to white.
- While the turkey's sizzling, divide the herb salad between four dinner plates then, as soon as the turkey's done, spoon it over the salad, making sure to include all the spicy juices. Top each serving with a spoonful of guacamole, pile tortilla chips on the side of each plate and serve.

- Turn your broiler on high. Cut baguettes in half lengthwise, but do not cut all the way through. Split open and place on a baking sheet. Place the baking sheet under the broiler and toast the baguettes for about 1 min or until lightly toasted.
- In a small bowl mash the avocado. Add tomatoes, green onions, and the lime juice and mix well. Season with salt and pepper to taste.
- Cut the pancetta in small pieces and fry it in a non stick pan, no additional oil is necessary, just until lightly browned. Remove from pan and add the chicken bacon and fry until lightly browned.
- To assemble the sandwiches, spread half of the guacamole onto each baguette. Next layer with half of the lettuce on each, chicken bacon, tomatoes, radishes, green onions, half the pancetta and drizzle with lime juice.
