HAITIAN BEEF PATTIES
Haitian patties are different from the Jamaican ones in that they have more of a puff pastry shell, which is less flaky but more puffy. I mostly describe the patties as being like croissants. Great for parties and get-togethers!

Steps:
- Place flour in a large bowl. Make a well in the center; add water and salt. Mix lightly with a wooden spoon until dough comes together. Cover with plastic wrap and chill for 30 minutes.
- Mix shortening and butter together in a small bowl.
- Transfer dough to a flat work surface; roll into a rectangle about 1/4-inch thick. Spread 1/2 of the shortening mixture on top. Fold 1 side of the rectangle into the center; spread remaining shortening on top. Fold other side of the rectangle over the first, like a letter. Roll into a 1/4-inch-thick rectangle; fold into thirds. Repeat the rolling and folding process one more time.
- Wrap dough with plastic wrap and chill, 8 hours to overnight.
- Fill a baking pan with water and place on the bottom rack of the oven. Preheat oven to 375 degrees F (190 degrees C).
- Pound shallots, parsley, garlic, and chile powder into paste with a mortar and pestle.
- Preheat a large skillet over medium heat; cook and stir beef until browned, about 5 minutes. Stir in shallot paste, onion, and beef broth. Cover and cook, stirring constantly, until juices are absorbed, about 10 minutes. Let cool, about 5 minutes.
- Roll chilled dough to a rectangle about 1/2-inch thick. Cut into 2 1/2-inch circles. Place 1 1/3 tablespoon of the beef mixture on 1 side of each circle. Fold and lightly press edges to seal.
- Transfer filled patties to a baking sheet. Brush tops and edges with egg yolk.
- Bake in the preheated oven until puffy, about 30 minutes. Reduce oven temperature to 300 degrees F (150 degrees C) and continue baking until golden brown, about 20 minutes.

BOEUF A LA HATIENNE (HAITIAN BEEF WITH TOMATOES & PEPPERS)
This is very good! You can buy a cheaper cut of beef for this, as it's simmered. When we lived in Haiti, we used to serve this with white rice, for the great sauce, and green plantain slices, my recipe #148367. I don't know how this slipped my mind - I use Scotch Bonnet peppers instead of chili peppers - they provide heat but not a sharp kind of heat.Updated 07/29/08. This could probably be made in the crockpot or prepared the day before; as this dish is more flavorful when served the next day, as is, with most dishes of this kind! (YUM) It can be made fiery hot or very mild, depending on the amount of chiles used, or how much heat your stomach can take!!! ;) This is also done with my recipe #148276 as it is a seasoning made with vinegar as a base. It is really very good with different kinds of dishes - American, Italian, Cuban & so on. Updated: 01/31/2010 when we make this here at the home I forgo cooking with the hot peppers as I am sure you can understand why but I do put a whole Scotch Bonnet pepper in the water when simmering so that it can get a little of the flavor & then I do the same in the oil when I heat it and the remove it -- it is really delicious! :)

Steps:
- Place the beef, water to cover, and salt in a large pot.
- Bring to a boil, lower heat, and simmer uncovered, until beef is tender and water is completely evaporated, 45 minutes to an hour.
- While the beef is simmering, heat the oil over medium flame in a skillet.
- Add onion, peppers, garlic and chile pepper and sauté till onions and peppers are wilted.
- Add tomatoes, vinegar, salt & pepper.
- Reduce heat to low and simmer until almost all liquid is evaporated, about 20-25 minutes.
- Add the beef to the peppers and onions and simmer another 20-30 minutes.
- Add a little water if necessary.
- Adjust seasonings and serve with rice, & fried green plantains (banan peseé).

- To prepare pastry:.
- sift together flour, curry powder, salt and then cut in the shortning until it resembles small peas. Add enough ice water to hold dough together, wrap in plastic and refridgerate 12 hours.
- To make filling:.
- Finely chop the onions and chile pepper, then mix thoroughly with the ground beef. Heat oil in a skillet and cook meat until browned, about 10 minutes. Stir in breadcrumbs, thyme, curry powder, salt and pepper.
- Mix the filling well and then add 1/2 cup of water. Cover and simmer about 30 minutes. Cool.
- Take dough out of fridge about 15 minutes before using. Roll out to 1/4 inch thickness and using a saucer to measure, cut into 4 inch circles. Sprinkle a little flour on each circle4 before stacking and cover stack with damp cloth.
- Preheat oven to 400. Setting out first pastry circle top with 1/12th the filling to cover half of it Fold over the other half and seal edges by pressing with a fork. Repeat with remaining. Bake 30 minutes or until golden brown.

HAITIAN PATE | BEEF PATTIES

- Combine salt water and flour in a large bowl. Mix well using your hands. Generously dust surface area. Knead until dough is firm and slightly sticky.
- Over medium heat, heat oil in a skillet or saucepan. Add onions, garlic, shallot, peppers and seasoning mixture. Stir-fry for 1 minute until softened.
- On a clean surface area, dust with flour generously to prevent dough from sticking. Using a rolling pin, flatten the dough and stretch in a rectangular circle.
