The garden meets the sea in this kicked up fish dish!! I wish I could credit this recipe's creator but it was given to me by a neighbor, who got it from her sister-in-law, blah, blah. I am just glad it came to me!

Halibut Creole image

Steps:

  • Preheat oven to 400 degrees F.
  • Lightly butter a shallow baking dish large enough to place fish in one layer.
  • Salt and pepper fish steaks, place in baking dish.
  • Mix together tomato, green pepper, onion, and jalapeno and top each fish steak with mixture.
  • Melt butter and mix in lemon juice and tabasco, then drizzle over each fish steak.
  • Bake approx 25 minutes, basting w/ pan juices about every 10 minutes.
  • NOTE: If I have closer to 2 lbs of fish steaks, I will double the sauce mixture, but that's just preference!

1 1/2-2 lbs halibut steaks
salt
fresh ground pepper or course ground pepper
3 tomatoes, peeled,seeded,and chopped
1/2 cup green pepper, chopped
1/2 cup onion, chopped
1 jalapeno, chopped (de-seeded to reduce heat, if you need to)
3 tablespoons butter
1 1/2 tablespoons lemon juice
1 teaspoon Tabasco sauce or 1 teaspoon your favorite hot sauce

  • In a 6-quart heavy saucepan bring wine and water to a boil with onion, carrot, celery, salt and pepper and simmer 20 minutes. Add oil and halibut and poach fish at a bare simmer, covered, until just cooked through, 5 to 6 minutes. Transfer fish with a slotted spoon to 8 plates. Spoon court bouillon over fish. Sprinkle fish with fresh coriander and garnish with lemon wedges.

1 tablespoon olive oil

  • Preheat oven to 400°F. Mix first 7 ingredients in small bowl. Place fillets on baking sheet. Brush on both sides with 1 tablespoon oil. Sprinkle top of each with seasoning.
  • Heat heavy large skillet (preferably cast-iron) over high heat until very hot. Add remaining 1 tablespoon oil; swirl to coat. Place fillets, seasoned side down, in skillet. Cook until very brown on bottom, 1 minute. Return fillets, browned side up, to baking sheet. Place in oven; bake until just opaque in center, about 8 minutes. Top each with 1 teaspoon butter.

  • Preheat broiler/oven or grill to medium-high heat.
  • Mix together all dry seasoning ingredients until well combined.
  • Rinse any ice glaze from frozen Alaska Halibut under cold water, pat dry with paper towel. Place halibut on a spray-coated or foil-lined baking sheet. Brush butter onto top surfaces of halibut and sprinkle with 1/2 teaspoon seasoning mixture (note: for best results with frozen fish, cook halibut 4 minutes before adding butter and spices.).
  • Grill or broil halibut 5-7 inches from heat for 13 minutes for frozen halibut OR 8 minutes for fresh/thawed fish . Cook just until fish is opaque throughout.
  • Store remaining seasoning mixture in an airtight container for future use.
