- Combine all ingredients and salt and pepper to taste. The amount of mayo used will depend on the amount of fish you have, and how moist it is. So, start with a small amount, such as ¼ cup and add more until you get your desired consistency. This is NOT a creamy-like salad with mayo. The mayo binds the dip, but doesn't mask the flavor of the halibut.
- Serve with crackers and veggies. I particularly like to stuff celery with it. But, I'm weird like that.
- HINT: Halibut is a delicate fish and doesn't take a long time to cook. A simple method - Preheat oven to 400, salt and pepper fish on both sides, place in oiled pan to prevent sticking. Cook 15 - 20 minutes, depending on how thick the fish is. Fish should be moist, flaky and opaque. If it is still a bit translucent, cook an addition 1 -2 minutes.

- Preheat the oven broiler. Grease a baking dish.
- In a bowl, mix the Parmesan cheese, butter, mayonnaise, lemon juice, green onions, salt, and hot pepper sauce.
- Arrange the halibut fillets in the prepared baking dish.
- Broil halibut fillets 8 minutes in the prepared oven, or until easily flaked with a fork. Spread with the Parmesan cheese mixture, and continue broiling 2 minutes, or until topping is bubbly and lightly browned.

HALIBUT DIP
My good friend brought this amazing halibut dip to a potluck at work. This is a warm dip, both in the sense that it is baked in the oven and that it contains jalapenos. What better combination that halibut and jalapenos? Along with the addition of cheese, sour cream and mayonnaise, what is NOT to like? Thank you Cory for sharing your sister's recipe.

- Skin and cut halibut into 1 1/2" pieces. Saute in 3 TBSP of butter and 4 cloves of minced garlic. Remove from stove and allow to cool, then shred or flake. Mix the sour cream, mayo, cheese, dill jalapeno, and jalapeno juice together. Add the shredded halibut and stir well to mix together. Bake in the oven for 30 minutes at 350. Serve warm with tostada chips, crackers, bread slices or other chips. This dip is Divine!
PAN-SEARED MARINATED HALIBUT FILLETS

- In a large sealable plastic bag, combine the 6 tablespoons olive oil, garlic, basil, salt, pepper and lemon juice. Add fish, seal bag, and turn to coat. Refrigerate for at least 30 minutes or up to 2 hours.
- In a large flat skillet (do not use a ridged pan), pour light olive oil or vegetable oil, tilting pan to spread evenly. Warm over high heat until smoking, then add fish fillets. Brush top and sides with marinade. Cook until seared, about 3 minutes; turn and sear other side, about 3 more minutes. Brush top and sides with marinade again. Reduce heat to medium. Cook until centers of fillets are just opaque, 2 to 4 minutes more on each side depending on thickness, brushing with marinade as before. Garnish with parsley, if desired, and serve.

- Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
- Whisk eggs, milk, and flour together in a shallow bowl. Stir panko bread crumbs and seasoned bread crumbs together in another bowl.
- Gently dip halibut squares into egg mixture, the press gently into bread crumbs mixture to generously coat completely. Place breaded halibut in a single layer on a plate while breading the rest.
- Cook halibut in preheated oil until golden brown and crisp on the outside, 4 to 6 minutes.

- Whisk together the flour, salt, pepper, garlic and paprika. Whisk in just enough beer to make the consistency pourable, but not too thin. The mixture should resemble pancake batter. Set the batter and the fish pieces in separate bowls next to the stove.
- Pour the oil into a heavy bottomed saucepan and warm it over medium high heat. You want it to be as hot as possible, without smoking. When the oil is hot, drop a few pieces of fish into the batter and coat well. Shake off the excess batter and using metal tongs, gently place the fish into the oil. Hold it there for a few seconds before releasing it, so that the coating will seal and it won't stick to the other pieces or the bottom of the pan. Repeat the process, cooking just a few pieces at a time to avoid crowding.
- Let them cook for a few minutes, until the coating is lightly browned. (I found it easiest to use separate tongs for coating the fish and for frying in the oil.) Remove from the oil with clean tongs or a large wire scoop (made for frying) and drain on a plate lined with paper towels. Test a piece with a fork to make sure the center is cooked and flaking. Serve with Dill Sauce and Enjoy!
