SPINACH CHEESE MANICOTTI
My husband says this dish is restaurant quality. It can be made ahead and kept in the refrigerator overnight. Very filling and great served with a salad and garlic bread.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine ricotta, spinach, onion and egg. Season with parsley, pepper and garlic powder. Mix in 1 cup mozzarella and 1/4 cup Parmesan. In a separate bowl, stir together spaghetti sauce and water.
- Spread 1 cup sauce in the bottom of a 9x13 inch baking dish. Stuff uncooked manicotti shells with ricotta mixture, and arrange in a single layer in the dish. Cover with remaining sauce. Sprinkle with remaining mozzarella and Parmesan.
- Bake in preheated oven for 45 to 55 minutes, or until noodles are soft.

- Cook manicotti according to package directions for al dente; drain. Preheat oven to 350°., Pour 1 cup sauce into an 11x7-in. baking dish. On a short side of each ham slice, layer one basil leaf, one piece string cheese and three slices pepperoni; roll up. Insert in manicotti shells; arrange in a single layer in baking dish., Pour remaining sauce over top. Sprinkle with olives and Parmesan cheese. Bake, uncovered, 25-30 minutes or until heated through. Freeze option: Cover unbaked casserole and freeze for up to 3 months. Thaw in the refrigerator overnight. Remove from the refrigerator 30 minutes before baking. Cover and bake at 375° for 25-30 minutes or until pasta is tender. Let stand for 10 minutes before serving.

Some members of my family call it manicotti, some call it Italian casserole. So I call it Manicotti Italian Casserole. This is one of my all time favorite meals to make, and it's super easy! For gatherings I make the whole recipe, for my family I cut it in half.

- Bring a large pot of lightly salted water to boil. Pour in rigatoni, and cook until al dente, about 8 to 10 minutes. Drain, and set pasta aside.
- Meanwhile, brown ground beef and italian sausage in a large skillet over medium heat. With a slotted spoon, remove beef and sausage to a baking dish. Stir mushrooms, spaghetti sauce, and cooked pasta into the baking dish. Sprinkle cheese and pepperoni over the top.

HAM AND PEPPERONI STUFFED MANICOTTI
I have changed this recipe per Brezzer's mom comments! I tried it some time ago and it was a little dry even then!My intentions were to change it sometime ago and never got around to it. But if you follow the sauce changed from tomato A or diced tomatoes to my spaghetti sauce #106003,it will not be dry or pasty. It is homemade and well take some time to make,but it freezes very well.

- In a pan, brown onion and garlic set aside. In a large bowl mix all cheese, ham and pepperoni and set aside.
- Boil manicotti for 6 minutes; drain and let cool! Mix tomato paste and tomatoes, salt and pepper; simmer 15-20 minutes.
- After the manicotti is cool, stuff each one. Put some sauce in the bottom of a 13x9 inch pan, add stuffed manicotti cover with suace and bake at 350 for 20 minutes.

- Preheat oven to 350 degrees.
- Boil a large pot of water and cook manicotti 6 minutes, or until slightly soft. Drain and set aside.
- Crumble the tofu while pasta is cooking. Add remaining ingredients to tofu, except for the pasta sauce and the cheese. Stir until blended.
- Stuff each pasta shell with the tofu mixture.
- Pour half the pasta sauce into a 13" x 9" pan.
- Fill manicotti with the filling using a small spoon, or a pastry tube.
- Put the rest of the sauce on top of the manicotti.
- Cover with foil, and bake for 20 minutes.
- * You can skip the egg and the cheese if you are making this vegan. I think it will still taste great.

- Drain, rinse in cool water and set aside.
- Meanwhile, cook onion and garlic in 4 tablespoons butter or olive oil
- until tender.
- Add ham and set aside to cool for 10 minutes.
- Stir in 1/4 cup Parmesan cheese.
- Cook green pepper in 6 tablespoons butter or olive oil until

- Stir in flour and cook, stirring constantly, until mixture bubbles, about 3 minutes.
- Add milk, and cook, whisking constantly, until sauce thickens.
- Stir in cheese.
- Mix 1/4 of cheese sauce with ham mixture.

- Sprinkle with 1/2 cup Parmesan cheese and bake at 350 degrees for 30-35 minutes until bubbly.
