This is a wonderful and quick dinner. I have never not been asked for the recipe when I serve it to friends. Don't be discouraged by the number of ingredients... you can add or delete any items you wish. Sprinkle Parmesan cheese on top, toss with olive oil and serve with French bread, if desired. Toss in some artichoke hearts if you'd like.

- Bring a large pot of lightly salted water to a boil. Add spaghetti and cook for 8 to 10 minutes or until al dente; drain and set aside.

- Bring a large pot of salted water to a boil. Add the spaghetti and cook as the label directs for al dente. Reserve 1 cup cooking water, then drain.
- Meanwhile, combine the olive oil and shallot in a large pot over medium heat. Cook, stirring occasionally, until the shallot is softened, 3 to 5 minutes. Add the wine and simmer until mostly reduced, 2 to 3 minutes. Add the cheese spread, mustard, ham, spaghetti and 1/2 cup of the reserved cooking water. - Melt the butter in a large ovenproof skillet over medium-high heat. Add the leeks, thyme, 1/2 teaspoon salt and a few grinds of pepper. Cook, stirring, until the leeks are tender, 8 to 10 minutes. Add the ham and cook until warmed through, about 2 minutes. Add the flour and cook, stirring, until moistened, 1 minute. Add the half-and-half and bring to a boil, then reduce to a simmer and cook until slightly thickened, about 2 minutes. Stir in 1 cup fontina until melted.

This is a favorite dish of mine for leftover ham. I like to use a mix of parmesan and white cheddar or you can use a monterey jack cheese if you prefer that, but it is just creamy and comforting. I love to bake a ham once a month. I cut it up and freeze and that way I always have a quick meal waiting to be put together. So many people only cook ham on holidays, but it is a great resource and inexpensive. Give this a try for a nice way to use your leftovers and good comfort food on a chilly night.

- Pasta -- Cook the pasta according to the directions on the package in a large pot of salted boiling water. Cook until al dente, drain and set aside.
- Ham and Vegetables -- Now in that same large pot you cooked the pasta in, add the butter and heat to medium. Then the mushrooms, ham, onion, scallions, parsley and cook until the mushrooms and onions are soft.
- Sauce -- To the vegetables, add the flour and stir until well blended. Then the broth, sherry, nutmeg, salt and pepper. Go easy on the salt because the broth and ham are both salty. Cook and stir until the sauce mixture thickens on medium to medium high heat. Reduce to medium and add in the cream, 1/2 of the parmesan, 1/2 of the white cheddar and the peas.
- Combine and Bake -- Add the drained pasta to the vegetable and cheese sauce and toss well. Spray a casserole dish 13x9 or similar with Pam or a nonstick spray and heat the oven to 350 degrees. Spread the pasta mix into the casserole and top with the extra cheese. Bake about 30 minutes until bubbly and the cheese get nice and brown on top. Let set 5 minutes before serving to allow the sauce to firm up.
- This is a absolutely great casserole. I have also done this same recipe with leftover turkey or chicken and was just as good. And don't be afraid to use a sharp cheddar or even a swiss cheese as well. I just happen to like the white cheddar and parmesan best.

HAM-IT-UP SPAGHETTI
Wonderful way to use up leftover ham. Heck, it's a great excuse to go out and buy the ham in the first place! Really quick and really easy, darned near impossible to mess this one up. If you start the water first, and keep checking it, you can time this so the sauce and pasta are ready at the same time. Pretty cool. When you hear the water boiling, dump in the pasta, give a few good stirs so those noodles don't get too chummy with each other and stick together. Set the timer for whatever is appropriate, then get back to the sauce-making. As microwave ovens vary, so does the speed at which chefs move about the kitchen, so prep & cook times are approximate

- Put the water on to boil for the pasta.
- While that's going, get a large microwave-able casserole with a lid.
- Open up the cans of soup and dump'em in.
- Stir in the milk and seasonings.
- Get all those soup lumps smashed up.
- Now dump in the ham and peas, and stir.
- Cover and microwave on HIGH for 5 minutes.
- Stir, and determine if it's gotten hot enough to melt cheese.
- No?
- Nuke it again!
- A couple more minutes.
- When it's just about boiling, dump in the cheese, stir and cover.
- Microwave another couple minutes, and let it have a rest until the pasta is ready.
- It's probably tired.
- You didn't forget that water you put on the stove for the pasta, did you?
- No?
- That's using your noodle.
- So, when you heard that water boiling away, you picked up the lid, dumped in the pasta, and gave it a stir.
- Well, then, it should be ready to drain in the colander now.
- Drain it well, and then add it carefully to that microwave-able casserole you have the sauce in.
- I hope you picked a big one.
- You might want to add just about half of it, stir it around, then add the rest and stir some more.
- Now, unless the sauce had to wait around a long time, it should be hot and ready to serve.
- If not, just cover and microwave on HIGH for 3 to 5 minutes until it's hot again.
- This has protein, carbs, and veggies all in one.
- Add a salad or fresh veggie sticks, if you want something more, and some fruit for dessert.
- Dinner is served, and barely a pot was dirtied in the making.

This, my friends, is comfort food! This is my adaptation of a recipe originally by The Pioneer Woman, Ree Drummond. Her original recipe calls for chicken instead of ham, which is also good. This is very like a tetrazzini. I have frozen this before baking, then thawed and baked with good results.

- Preheat oven to 350 degrees.
- Melt 2 T. butter in skillet, add mushrooms, and saute until done. Remove to large bowl.
- Bring large pot of salted water to boil and cook spaghetti according to package directions.
- While spaghetti is cooking, melt remaining 6 T. butter in skillet you used for the mushrooms.
- Add flour and stir to make a roux.
- Slowly add chicken broth, stirring to avoid lumps.
- Add milk, and stir to combine.
- Cook and stir until thickened, then add parmesan cheese.
- Add sauce to bowl of mushrooms along with cooked spaghetti and ham. Stir to combine well.
- Pour into 9x13 pan. Sprinkle with cheese and bake, uncovered, for 30 minutes or until hot and bubbly.
HAM AND VEGETABLE PASTA
This recipe started with the question of what to do with leftover ham. It's an adapted recipe from Taste of Home. Although very rich, we loved the mix of fresh vegetables with the ham in a cream-based sauce. I'm going to try the recipe again, lightening the sauce by using half and half with chicken broth to replace the cream.
