HAM LOAF WITH MUSTARD SAUCE
Brown sugar, mustard, herbs and spices season this hearty ham loaf. I like to make several loaves to serve to our retirement club. To speed things up, I use my food processor's chopper blade to grind the meat.

Steps:
- In a large bowl, combine the bread crumbs, milk and eggs. Crumble meat over mixture and mix well. In a small bowl, combine brown sugar, cloves and mustard. Spread in two greased 9x5-in. loaf pans. Press meat mixture on top. Bake, uncovered, at 350° for 1-1/2 hours or until a thermometer reads 160°. Let stand for 10 minutes before inverting onto serving platters., For sauce, combine egg yolks, mustard, vinegar, sugar, water and salt in a heavy saucepan. Cook and stir over low heat until mixture is thickened and reaches 160°, about 5 minutes. Remove from the heat. Stir in butter and horseradish. Cool. Fold in cream. Serve with ham loaves.

HAM LOAF WITH HOT HORSERADISH SAUCE
Raisin sauce is also very nice with this old favorite. From the Mississippi Valley chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947.

Steps:
- Mix the meats together very well.
- Mix egg, milk and cracker crumbs together; add to meat mixture and blend thoroughly.
- Place mixture in a bread pan and bake at 350F for 45 to 60 minutes.
- For the sauce: Place horseradish in a small saucepan.
- Add flour, salt, paprika and butter; pour in cream and cook until thick and smooth stirring constantly.
- Remove from heat, pour over egg yolk, stirring constantly and return to saucepan; cook for 30 seconds.
- Serve at once.

Ham loaf served with horseradish sauce. A slightly sweet ham loaf that is great for holidays, everyday dinners, and sandwiches.

Steps:
- Preheat an oven to 350 degrees F (175 degrees C).
- Combine the ground ham, ground pork, onion, oats, eggs, parsley, ground mustard, pepper, and evaporated milk in a large bowl. Mix well. Form in to 2 loaves; place into 9x13 inch baking pans.
- Bake loaves in preheated oven for 30 minutes. Stir the brown sugar and vinegar together in a small saucepan; boil for 1 minute. Remove loaves from oven, and pour brown sugar mixture over. Return loaves to oven; baste frequently with the pan juices until browned and cooked through, 30 to 45 minutes longer.
- Combine the mayonnaise, sour cream, horseradish, and lemon juice in a small bowl. Season to taste with salt and pepper. Serve sauce over sliced ham loaf.

- Ham Loaf: Mix all together in bowl then add milk. Make sure eggs are well blended. Grease 2 9x5 loaf pans. Bake at 350 for 30 minutes then baste every 15 minutes with glaze for 1 hour. Be sure to put on a baking pan lined with foil while in oven as it may bubble over! Glaze: Mix together then boil 1 minute Sauce: Mix together and serve room temperature.

- In a bowl, combine the egg, milk and cracker crumbs. Crumble meat over mixture and mix well. Pat into a greased 5-3/4x3x2-in. loaf pan or shape into loaf and place in a shallow baking pan., In a small saucepan, bring glaze ingredients to a boil; pour over loaf. Bake at 350° for 35-40 minutes or until a thermometer reads 160°, basting occasionally. Meanwhile, for sauce, place mayonnaise and horseradish in a bowl. Fold in whipped topping. Serve with ham loaf.
