Glazed Pineapple Ham image

Steps:

  • Preheat the oven to 400 degrees F.
  • Shingle the ham slices in 2 rows on a ceramic baking dish. Top each with a pineapple slice, then place a cherry in the middle of each pineapple ring. Cover with foil and bake for 15 minutes.
  • Whisk together the brown sugar, apple juice and mustard. Remove the ham from the oven, uncover and drizzle with the glaze. Continue to bake, glazing in 5-minute intervals, for an additional 20 to 25 minutes. Serve in the baking dish.

2 1/2 pounds boneless cooked ham, sliced into 18 slices
Two 20-ounce cans pineapple slices
18 maraschino cherries
3/4 cup packed brown sugar
2 tablespoons apple juice
2 teaspoons Dijon mustard

Ham Sliders with Sweet-and-Sour Pineapple Marmalade image

Steps:

  • Whisk the orange juice, vinegar, brown sugar and 2 tablespoons water in a medium saucepan over medium-high heat until the sugar dissolves, about 2 minutes. Add the pineapple, red onion and jalapeno. Bring to a low boil, then reduce the heat to a simmer. Cook, stirring occasionally, until the mixture thickens, 15 to 30 minutes. Season with salt and pepper. Let cool.
  • Divide the ham among the buns. Top with the pineapple marmalade.

1/2 cup fresh orange juice (from 2 oranges)
1/4 cup white wine vinegar
3 tablespoons packed light brown sugar
2 cups chopped pineapple (from 1/2 medium pineapple)
2 tablespoons minced red onion

Bake at 325° for 1-1/4 to 2 hours or until a thermometer reads 140° and ham is heated through. , Meanwhile, in a saucepan, combine 1/4 cup water, brown sugar, soy sauce, ketchup, mustard and pineapple. Bring to a boil. Reduce heat; cover and simmer for 10 minutes. Combine cornstarch and remaining water until smooth; stir into pineapple sauce. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with the ham.
