HAM MARINADE
This marinade tones down the saltiness of a ham slice. It's delicious if you grill the ham slice after marinating. The time does not include marinating time.

Steps:
- Mix all marinade ingredients.
- Put ham and marinade in resealable plastic bag.
- Marinate ham slice a few hours or overnight.
- Fire up the grill or broiler or even heat in a pan on top of the stove.
- Cook ham until done and heated through.
- Baste during cooking.
PORK & HAM ROAST MARINADE
This recipe comes from my Auntie Eleanor and is about 40 years old. This is an amazing recipe. I cannot tell you how good this is you have to make it yourself a unique taste!

Steps:
- 4 cloves of garlic aside.
- 4 garlic cloves finely minced add to sauce pan.
- Add all ingredients including juice from crushed pineapple to a sauce pan.
- Simmer until thicken.
- Pierce pork or ham roast.
- Insert garlic cloves.
- quarter onions and add to roasting pan with roast.
- Baste roast and put into 350 oven.
- Baste every 1/2 hour until browned and roast is done.
- Pineapple rings can be added on top with toothpicks before roast is done Maraschino cherries can be put in center of rings.
- Note:.
- Please only use 7 UP and French's mustard it is just not the same without them. Make without the 4 oz of pineapple as well still wonderful it will make a fabulous gravy.
- This recipe which came to me from my Aunt Eleanor, did not include the garlic so you may want to leave it out.
HOME-CURED HOLIDAY HAM
There are many reasons for making your own holiday ham: bragging rights that you actually did this, but also that you can flavor your ham any way you want and you can control the salt content.

Steps:
- Place kosher salt, brown sugar, pickling spice, and pink salt in a container large enough to hold the brine and the ham.
- Bring 2 quarts of water to a boil and pour over the brine ingredients; whisk to dissolve. Pour in 1 gallon fresh cold water to cool down the mixture.
- Score the skin side of the pork roast with a sharp knife. Cut into the fat beneath the skin but not into the meat. Score about 1 inch apart, then score in the opposite direction to get the classic diamond-shaped pattern.
- Lower scored roast into the cooled brine, skin side up. Use a plate to weigh down the roast so that it cures fully submerged in the liquid. Refrigerate for 1 day for every 2 pounds of pork (for a 7 pound roast, cure for at least 2 1/2 days). Turn the roast over halfway through the brining process.
- Remove roast from brining liquid. Discard the brining liquid and transfer the roast back to the brining container. Cover the roast with fresh cold water to rinse off some of the salt. Depending on how salty you want your ham, you can soak it for just a few minutes or overnight. Remove roast from the water and blot dry with paper towels.
- Preheat oven to 325 degrees F. Add a cup of water to a roasting pan with 2 whole star anise. Place roast on a rack in the roasting pan.
- Roast until ham reaches an internal temperature of 130 to 135 degrees F, about 2 hours. Ham will not be fully cooked at this point. If water has nearly evaporated, add a splash more. Increase oven temperature to 425 degrees F. Continue to roast until skin is browned and crispy and ham reaches an internal temperature of 145 to 150 degrees F.
- To make the optional glaze, mix the mustard, maple syrup, cayenne pepper, and salt together in a bowl. Brush glaze on the ham at this point, not before. Return roast to oven for about 5 minutes to crisp it even further.

BOURBON-MARINATED PORK ROAST WITH COUNTRY HAM JUS
Steps:
- To marinate the pork roast, combine maple syrup, molasses, bourbon, chili sauce, and chili paste in a shallow dish and mix well. Brush the roast all over with the marinade and refrigerate it 8 hours or longer.
- Preheat 1 side of a grill to high heat.
- To cook, sear the roast all over on a hot grill. Once it browns, move the meat to a cooler spot. Lower the heat and continue to cook, covered, at a lower temperature, until it is done, about 11/2 to 2 hours, depending on its size -- the meat should register 150 to 155 degrees F in its thickest part.
- To serve, reheat the Country Ham Jus and divide it among serving plates. Place pork on plates and add a generous spoonful of Pawpaw Relish.
- For the country ham jus, combine the ham bones, 4 cups water, onion, celery, carrot, thyme, bay leaf, and pepper in a large stockpot. Simmer, uncovered, for 3 hours, or until liquid is reduced to 1 cup. Strain out the solids. Combine with demi-glace in pot and cook until reduced to 1 1/2 cups. Add salt, to taste. Refrigerate.
- Mix all the ingredients together.
MARINATED HAM STEAKS
Really easy and good. These can be frozen also.

- 1. In large ziplock bag, combine first 6 ingredients. Mix well, add ham. Turn to coat. Refrigerate at least 2 hours, turning occasionally.
- 2. Drain and reserve marinade.
- 3. Either broil 3 to 4 minutes each side or grill uncovered over medium-high heat for 3-4 minutes on each side. Baste frequently with reserved marinade.
- 4. NOTE: To double recipe add 3/4 cup water and 1 can of pineapple juice (instead of 2 cans), and double rest of ingredients.
