- Preheat oven to 375°. Combine the first six ingredients. Divide crescent dough into 24 portions. Press into greased mini muffin cups., Spoon 1 tablespoon ham mixture into each cup. Bake until golden brown, 13-15 minutes.

This is one of the first Pampered Chef recipes I had. I loved them so much I made them over and over again after the party. These pop-in-your-mouth gems even use basic ingredients! I bet the kids will love to help with this recipe!

Steps:
- Preheat oven to 350 degrees.
- In a small bowl combine finely chopped ham and onion, cheese, egg, mustard, and pepper.
- Mix well.
- Lightly spray a mini muffin pan with non stick cooking spray.
- Unroll crescent rolls and press dough into one large rectangle.
- Using a pizza cutter (easiest tool to use for this) cut rectangle into 24 squares.
- Press dough squares into muffin cups and shape up around the edges.
- Fill each muffin cup with some of the ham mixture.
- Bake 13-15 minutes or until lightly browned.

HAM AND CHEESE PUFFS
My family used to make these for special occasions, or random visitors! Basically a gougere! They can be baked and frozen then just brought out and thrown in a toaster oven when needed! Sometimes I like a stronger mustard taste so I double the dry mustard. I'm guessing at the amount of servings as I don't think I've ever made a single batch of this recipe - haha.

Steps:
- Preheat oven to 400 degrees Fahrenheit.
- Combine water, butter, and salt in a saucepan and bring to a boil.
- Add the flour all at once, stirring vigorously, until the batter leaves the sides of the pan and a ball of paste forms.
- Remove from heat and allow to cool for about a minute.
- Add eggs, one at a time, beating vigorously after each one until the dough is smooth.
- Stir in cheese, ham, and dry mustard.
- Place heaping teaspoonfuls on a lightly greased baking sheet.
- Bake for 15 to 20 minutes until firm and golden.
- IF FREEZING: Allow to cool completely and store in an airtight container between layers of wax paper.
HAM AND CHEESE IN PUFF PASTRY
Steps:
- Preheat the oven to 450 degrees F. Place a piece of parchment paper on a sheet pan.
- Lay 1 sheet of puff pastry on a floured board and carefully roll it out to 10 by 12 inches. Place it on a sheet pan and brush the center with the mustard, leaving a 1-inch border around the edge. Place a layer first of ham and then cheese, also leaving a 1-inch border. Brush the border with the egg wash.
- Place the second sheet of puff pastry on the floured board and roll it out to 10 by 12inches. Place the second sheet on top of the filled pastry, lining up the edges. Cut the edges straight with a small, sharp knife and press together lightly. Brush the top with egg wash and cut a few slits in the top to allow steam to escape.
- Bake for 20 to 25 minutes, until puffed and golden brown. Allow to cool for a few minutes and serve hot or warm.
ULTIMATE HAM CUPS
I created this recipe to use leftovers from Thanksgiving for a day-after brunch. It combines the best of the holiday flavors - smoked ham, cranberries, almonds, and smoked mozzarella cheese - into puff pastry shells, to make a really elegant presentation for a buffet, or it could be put into mini muffin pans for an appetizer. Sprinkle with finely chopped parsley or paprika if desired.

- Preheat oven to 400 degrees F (200 degrees C).
- Melt 1/4 cup butter in a saucepan over medium heat. Whisk in flour until fully incorporated. Add milk; bring to a slow boil. Whisk until thickened, 3 to 5 minutes. Add nutmeg, white pepper, cayenne, and salt. Remove from heat and let filling cool slightly. Add ham, mozzarella cheese, cranberries, and almonds.
- Roll out puff pastry on a lightly floured work surface. Brush lightly with melted butter. Cut into 9 equal squares. Stretch gently to enlarge and place squares, buttered side-down, into muffin cups. Divide filling evenly between the cups.

- Preheat oven to 375 degrees F (190 degrees C). Grease a cookie sheet. Set aside.
- In a medium saucepan heat butter and water over medium heat until butter melts. Fold in flour all at once, and stir vigorously until a ball forms in the center of the pan. Remove from heat and let stand for 5 minutes.
- Add eggs, one at a time, and beat until fully blended. Mix should be very stiff. Drop by 1/2 to 3/4 teaspoon onto prepared cookie sheet.
- Bake for 30 to 40 minutes, or until the moisture disappears. Cool and slit a small opening on one side and stuff with desired filling.

- In a small bowl, beat the cream cheese, mayonnaise and milk until blended. Stir in the ham, cheese, pepper, chives, parsley and garlic. This is my cross-cultural take on a frequently served Swedish snack. If you're making the North African mantecaos specifically for this dish, you might omit the cumin, but I think they're more interesting with it. You can also make these with standard biscuits, in which case they're pretty simple.
