HAM AND EGG BREAKFAST BAKE
This is a great alternative to an omelet when feeding a number of people.

- Preheat oven to 325 degrees F (165 degrees C). Prepare a 13x9-inch baking dish with cooking spray.
- Beat eggs, milk, sour cream, and salt together in a large bowl with wire whisk until well blended. Mix ham, bell peppers, mushrooms, and green onion into the egg mixture; pour into the prepared baking dish.
- Bake in the preheated oven until a knife inserted into the center comes out clean, about 50 minutes. Cover top of dish with Cheddar cheese; continue baking until cheese is melted, about 3 minutes.

- In a skillet, combine the brown sugar, flour, mustard, ginger ale and vinegar. Bring to a boil over low heat; cook and stir for 2 minutes or until sugar is dissolved and sauce is thickened. Add ham slices and heat through.

PA. DUTCH - HAM SLICE BAKED IN MILK
I just found this recipe among my Mother's handwritten recipe cards circa 1976. As I remember, we enjoyed it often. I think it came from a Pa. Dutch cookbook we had. That book might have been a gift from my Pa. Dutch mother-in-law. We never used the pineapple, though.

Steps:
- Rub ham slice with dry mustard.
- Place ham in large skillet or glass baking dish.
- Cover with brown sugar.
- Add enough milk to barely cover the ham.
- Bake 1 hour to 1-1/4 hours at 325. Milk should be almost all absorbed.
- You can add pineapple slices 1/2 hour before done. We preferred not to use the pineapple.

- Combine apple juice, brown sugar, and dry mustard.
- Pour over ham.
- Bake, covered, at 350F for about 2 hours, or until liquid reduces to approximately 1/2 - 1 cup.
- Turn ham slices occasionally during cooking time.

- Preheat oven to 375°. In a saucepan, bring the potatoes, carrot, celery and water to a boil. Reduce heat; cover and cook until tender, about 15 minutes. Drain. , In a large skillet, saute ham, green pepper and onion in 3 tablespoons butter until tender. Add the potato mixture. Transfer to a greased 1-1/2-qt. baking dish. , In a large saucepan, melt the remaining butter; stir in flour until smooth. Gradually whisk in the milk, salt and pepper. - Cut ham slice in half. In a skillet, cook ham in butter for 3-4 minutes on each side or until heated through. Meanwhile, drain pineapple, reserving the juice. Set aside two pineapple slices; refrigerate remaining pineapple for another use. , In a bowl, combine cornstarch, pineapple juice, honey, steak sauce and mustard until smooth. EASY BAKED HAM
My family does this every year with our Christmas Eve ham and it never fails to be anything but delicious!

- Preheat the oven to 350 degrees F (175 degrees C).
- Remove as much of the ham from the bone as you can. Layer one third of the ham in the bottom of a 6 quart casserole dish. Top with a few pineapple rings and 1/4 of the brown sugar. Repeat the layers, ending with pineapple rings on top, but don't sprinkle the last 1/4 of brown sugar.
- Pour any juice left in the pineapple can over the ham. Then pour in enough of the ginger ale to fill the dish about half way. Sprinkle the remaining brown sugar over the top.
- Cover with aluminum foil and bake for 20 minutes in the preheated oven. Uncover and cook for an additional 20 minutes.
