Steps:
- Pulse together the flour, sugar and 1/2 teaspoon salt in a food processor. Add about a 1/3 of the chilled butter cubes and process until the butter is absorbed. Add the remaining butter and pulse until the butter is the size of peas, 5 or 6 pulses. Add the vinegar. Then, pulsing quickly a few times as you do it, add the ice water through the tube. Squeeze some dough between your fingers; it should just hold its shape without feeling wet. If it is crumbly, add more ice water a tablespoon at a time. Pulse quickly; do not overwork or the dough will be tough. Wrap the dough loosely in a large piece of plastic wrap, then firmly press and flatten the dough into a thin round. Refrigerate for 1 hour.
- Lightly dust a work surface with flour, roll the dough out into an 11- to 12-inch round, about 1/8 inch thick. Center the dough in a 9-inch pie plate, with an even overhang all around. Fold the edges and flute or crimp. Chill for at least 30 minutes.
- Preheat the oven to 375 degrees F.
- Press a piece of foil over the chilled crust, fill with pie weights, raw beans or rice. Bake to set the crust, about 20 minutes. Remove the foil and weights and bake until the crust is light brown, 5 to 10 minutes more. Let cool slightly before adding the filling.
- Adjust the oven temperature to 350 degrees F.
- Sprinkle the onion evenly into the crust. Combine the cheese, ham and spinach in a small bowl and sprinkle it in an even layer over the onion.
- Whisk together the half and half, parsley, eggs, 1/2 teaspoon salt and 1/4 teaspoon pepper in a small bowl.
- Pour the custard over the filling and bake until the quiche is set, 35 to 50 minutes. Let cool at least 30 minutes before serving warm or at room temperature.

Steps:
- Preheat the oven to 350 degrees F (on low fan speed, if using convection). During this time, cover the bottom of the piecrust with aluminum foil and uncooked beans. Place the piecrust in the oven and bake (blind bake) for 10 to 12 minutes to allow the crust to cook. The crust should be light brown on the edges when removing from the oven.
- During the cooking of the crust, whisk together the milk, salt, pepper, nutmeg and eggs in a bowl. After mixing the eggs, in a second bowl, blend together the spinach, bacon, cheese and parsley. Add half of the egg mixture to coat the ingredients, again mixing well. Next, add the mixture to the cooked crust then finish with the remaining egg mixture. Bake in the oven until the middle of the quiche is set, about 20 minutes.
- Remove and serve.
SPINACH HAM QUICHE
I found this recipe in Woman's Day like 10 years ago. This is a great way to get spinach into your diet without the taste. My family hates spinach and you can't even taste it in this great recipe! Plus it is a great way to use your leftover ham from holiday parties!

GROUND BEEF SNACK QUICHES
My husband, Cory, farms, so supper can sometimes be quite late. A hearty appetizer like these meaty mini quiches is a perfect way to start the meal. They taste super made with ground beef, but I sometimes substitute bacon, ham, ground pork or sausage. -Stacy Atkinson, Rugby, North Dakota

Steps:
- Preheat oven to 400 degrees F.
- Season ground beef with onion powder, garlic powder, and black pepper to taste.
- Brown beef.
- Open pizza crust package and slice into 2 or 3 sections depending on how hungry you are!
- Stretch dough sections a bit to thin them out and to make room for the filling.
- Layer beef, cheese, and spinach on each dough section.
- Wrap dough around filling.
- Bake on a cookie sheet for 10-15 minutes until golden.
- Serve with warm tomato sauce for dipping.
- Tips: I like to wrap the crust around the filling so that all four sides overlap on top.
- Then I flip them over so that they bake on the overlapping sections to prevent the bottom from falling out.
- You can patch any thin spots before baking by pulling dough off the thick spots and pressing it over the thin area.

HEARTY BACON-SPINACH QUICHE
This does not call for heavy cream like many other quiche recipes I've found. The original recipe is from www.marthastewart.com, which I've altered. I use 6 eggs, not 4 eggs as the recipe calls for. The cheeses I used instead of 1 cup cheddar: Norvegia (Norwegian mild white cheese), mozarella and parmesan. It also calls for 2 tablespoons chopped onion, but I substitute dried chives, powdered onion, and powdered garlic. We had it for dinner , but it would make a great brunch.
