Not only is this casserole easy to make and great tasting, it's pleasing to the eyes with it's shades of golden brown, yellow, and green. This dish is great served with sliced fruit and toast or muffins. You may substitute chopped cooked ham for the bacon if you wish.

- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble, and set aside.
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 7x11 inch baking dish.
- In a large bowl, beat together the eggs and milk. Stir in the bacon, hash browns, green onions, and 1 cup shredded Cheddar cheese. Pour into the prepared baking dish.

- For the dill sour cream: In a medium bowl, whisk to combine the sour cream, dill and some salt and pepper. Cover and refrigerate until ready to serve.
- For the hash brown cake: Heat the butter and oil in a large nonstick skillet over medium-high heat. In a large bowl, stir to combine the potatoes, flour, paprika, salt, black pepper, cayenne pepper, eggs, garlic and onion.
- Spread the potato mixture in an even layer to cover the bottom of the skillet and use a spatula to press gently. Cover and cook until the potatoes are warmed through and crisp on the bottom, 8 to 10 minutes. Uncover the skillet and remove from the heat. - Prepare a campfire or a charcoal grill for cooking over medium-high heat. Add a square cast-iron pie iron to the campfire or grill to preheat.
- Lightly beat the eggs in a large bowl. Add the bacon, Cheddar, hash browns, 1 teaspoon salt and 1/2 teaspoon pepper and toss together until everything is equally distributed. Carefully remove the pie iron from the fire. Open the iron and add 2 tablespoons butter, then swirl it around both sides. Add a quarter of the potato mixture to the pie iron and close it. Place the iron back in the fire and cook for 2 minutes, turning and rotating every few seconds. Remove the iron from the fire and transfer the potato pocket to a plate. MAN HASH BROWNS

- Place a 10-inch cast iron skillet over medium low heat for 5 minutes.
- While the pan is heating, grate the potato on the largest hole of a box grater. Squeeze the grated potatoes in a tea towel to remove excess moisture.
- Add the fat to the pan and scatter evenly with the potatoes. Sprinkle with salt and cook for 5 minutes without disturbing. Decrease the heat to low, flip the potatoes, and cook for another 5 minutes. Serve immediately.

TEXAS STYLE HASH BROWNS SHEPHERD'S PIE
Since I have been living in Texas, I have been experimenting with all of my favourite English recipes and making them more texas-ified! Like with many of my good old favourites, my husband has tried my original 'British shepherds pie' and very much prefers this one! This is a great easy and wallet friendly recipe to make, and can be kept in the frige when cool and eaten cold / warmed up in the microwave the next day.

- Brown meat and onions in a dry frying pan on high heat. Meat will cook in its own juices, so do not add oil. When cooked, drain.
- Tip back into frying pan and add tomatoes, soup, mushrooms and peas.
- Add one can full of water and stir.
- Add Worcestershire Sauce and A1 Steak Sauce to taste. (Use approx 2 tbsp of Worcestershire Sauce as a guideline, and 1 tsp of A1, but you will know when it tastes right!).
- Cook on a high heat until bubbling, then cover and reduce heat.
- Simmer for 10 - 15 minutes, stirring occasionally.
- In the meantime add cheese and milk together in a bowl. Add beaten egg and stir until well mixed. Set aside.
- When Meat mixture has condensed down and thickened slightly, remove from heat.
- Spoon mixture into a 9x13-inch oven pan with a slotted spoon, draining off excess 'juice' if necessary.
- Pan should be 1/2 to 3/4 full.
- Add packaged hash brown mix on top of the meat mixture, pressing down to compact.
- Pour egg, milk and cheese mixture (above) on top of the hash browns, and bake at 350 degrees for 25-30 minutes, or until hash browns have browned to a nice crispy golden colour.
- During the last few minutes of cooking, you can add extra shredded cheese to the top of the pie, and broil for a few minutes to melt.
- This recipe tastes great when served with HP sauce (which is a spicy English sauce). My husband also enjoys it with ketchup, however neither of these are necessary, and this is simply a serving suggestion! Enjoy!

HASH BROWNS STROGANOFF PIE
This is a simple, but tasty meal that works great for those nights when you don't really feel like cooking but know you have to. It comes from Grandma's Touch cookbook. I jazz it up a wee bit with the cajun spice, can of diced green chili's and sometimes a chopped jalapeno. Those are optional items and can be left out if preferred. I usually serve it with a green salad and some steamed broccoli. (** I use recipe #14372 cajun spice)

- Combine the egg, potatoes and sour cream. Press into a greased 8 inch pie plate. Bake at 350°F for 15 minutes.
- In a large skillet, brown the beef . Add the optional cajun spice when cooked about half way. Continue to brown beef until it's just finished cooking and drain off excess fat.
- Add the onion and celery to the meat and saute until the onions are transparent. Remove from heat.

- 1.Hash Brown Topping: Heat 2 tablespoons olive oil over medium heat in a large nonstick skillet. Add hash browns in a single layer and cook undisturbed for 5 minutes. Flip hash browns and cook another 5 minutes. (They will not be all the way cooked - just golden in some places.) Set aside to cool. 2.Meat and Vegetables: Brown beef and onions in a 12" oven proof skillet* over medium high heat until beef is cooked through.
