A delicious breakfast/brunch recipe using hash browns, diced ham, eggs, etc. Easy to make and everyone loves it!

Steps:
- Preheat oven to 425 degrees F (220 degrees C).
- Press hash browns onto the bottom and sides of a 9 inch pie dish. Drizzle with melted butter, and sprinkle with seasoning salt. Bake in preheated oven for 20 minutes, or until beginning to brown.
- In a small bowl, combine ham, onion and shredded cheese. In a separate bowl, whisk together eggs, milk, salt, pepper, and a little seasoning salt. When crust is ready, spread ham mixture on the bottom, then cover with egg mixture.
- Reduce oven temperature to 350 degrees F (175 degrees C.) Bake in preheated oven for 20 to 25 minutes, or until filling is puffed and golden brown.

HASH BROWN QUICHE CUPS

- Preheat oven to 400°. Grease 8 muffin cups., In a bowl, whisk egg, salt and pepper until blended; stir in potatoes and Asiago cheese. To form crusts, press about 1/4 cup potato mixture onto bottom and up sides of each prepared muffin cup. Bake until light golden brown, 14-17 minutes., For filling, in a small bowl, whisk eggs and chives until blended; stir in cheese and spinach. Spoon into crusts; top with bacon. Bake until a knife inserted in the center comes out clean, 6-8 minutes., Freeze option:Freeze cooled baked tarts for up to 3 months. To use, reheat tarts on a baking sheet in a preheated 350° oven until heated through, 5-10 minutes.

HASH BROWN QUICHE
We love to have guests stay with us, and this is a great dish to serve for breakfast. To save time in the morning, I sometimes make the hash brown crust and chop the ham, cheese and peppers the night before. - Press hash browns between paper towels to remove excess moisture. Press onto the bottom and up the sides of an ungreased 9-in. pie plate. Drizzle with butter. Bake at 425° for 25 minutes. , Combine the ham, cheese and green pepper; spoon over crust. In a small bowl, beat eggs, milk, salt and pepper. Pour over all. Reduce heat to 350°; bake for 25-30 minutes longer or until a knife inserted in the center comes out clean. Let stand for 10 minutes before cutting.

Steps:
- In a bowl, combine hash browns, one cup of cheddar (100 g), salt, pepper, and olive oil.
- Divide hash brown mixture into the cups of a 12-cup muffin tin. Press the hash browns down firmly along the shape of the cups. Bake at 400°F (200°C) for 20 minutes to set the cups.
- Crack an egg into each cup and sprinkle some salt, pepper, and the remaining cheddar on top. Bake again at 350°F (180°C) for 13-15 minutes, or until the egg whites have set.
- After they have cooled, remove cups by running a knife along their edges. Serve with all the toppings you desire!

I found this recipe in one of the TOH special additions. Our Christmas meal at our home is Breakfast Brunch. I made this dish this year, with a couple of revisions, and it was the hit of the brunch.

Steps:
- Preheat oven to 425 degrees F.
- Presh hash browns between paper towels to be sure to get all moisture out.
- Press into the bottom and up the sides of an ungreased, deep dish 9" pie plate.
- Drizzle butter over hash browns.
- Bake for 25 minutes.
- Meanwhile, combine the ham and cheese.
- When the hash browns are browned, spread the ham and cheese mixture over the top.
- Mix eggs, milk, salt and pepper and pour evenly over the ham and cheese mixture.
- Reduce oven heat to 350 and bake the quiche for 25 to 30 minutes longer, or until knife inserted in center comes out clean.
- Allow to stand for 10 minutes before cutting.
- Hint: my family loved this with sauted garlic mushrooms served over the top of each slice, salsa would be good served over the top also.
HASH BROWN QUICHE
Perfect potato and egg combo! Originally from Paula Dean's kitchen, I reduced the butter and swapped half and half for the cream to make it a bit lower in fat. Use turkey bacon and reduced fat cheese for even more calorie savings!

- Once potatoes are thawed and drained of excess water, combine them with melted butter and seasoning salt. Press into 9 inch pie plate to form a crust, making sure that the sides are even. Bake in a 450 degree oven for 20-25 minutes until the crust is golden brown.
- While the crust bakes, cook bacon over medium heat, stirring often. Add chopped onion once the bacon begins to brown and cook until soft. Drain bacon and onion mixture onto paper towels and let cool.
- Mix together eggs, half and half, cheese, salt and pepper, bacon and onions until well combined.
- Pour egg mixture into baked crust and place in 350 degree oven for another 30 mintues until the quiche is golden brown and slightly puffy on top.

- Preheat the over to 350 degrees F (175 degrees C). Spray a 9x13-inch casserole dish with cooking spray.
- Drain defrosted hash browns well (I used a salad spinner). Combine drained hash browns, 2 cups Colby cheese, cream of chicken soup, sour cream, onion, butter, egg, garlic powder, salt, and pepper in a large bowl.
- Spoon the mixture into the casserole dish, and sprinkle the remaining 1/2 cup of cheese over the top.

- Preheat oven to 400ºF (375ºF for convection ovens). Coat a muffin tin with nonstick spray.
- Hash brown cups: Whisk together eggs, cheddar cheese, kosher salt, and ground pepper in a bowl. Fold in shredded hash browns.
- Press approximately a ¼ cup of potatoes into each muffin cup, pressing down in the middle and going up the sides of the space to form a cup shape.
- Bake cups for 10-15 minutes, or until edges of potatoes are turning golden brown. Remove from oven.
- Filling: Arrange Kroger Traditional Pork Sausage in a cold skillet. Turn heat to medium-low. Cook until browned on the first side, then flip and cover pan with a lid. Continue cooking sausage until no longer pink in the middle. Remove sausage (leaving fat behind in the pan) and drain on paper towels. Roughly chop sausage into small pieces and place in a bowl.
- In the sausage fat, sauté diced onion until softened and translucent, about 5 minutes. Place onions in the bowl with the sausage.
- In the same bowl, whisk in the eggs, heavy cream, and kosher salt. Fold in baby spinach.
- Fill each hash brown cup with filling. Cover muffin tin with aluminum foil.
- Bake for 14-16 minutes or until egg is cooked through. Remove from oven.
- Remove quiches from muffin tin. Serve with chopped chives for garnish!
