HAWAIIAN SHOYU CHICKEN

This is a Hawaiian dish that uses a Chinese cooking method with Japanese ingredients. You can literally find 100s of Shoyu chicken recipes in Hawaii and every household has it's own twist. The key if you want to be "authentic" is to use Hawaiian Shoyu, it's a bit sweeter than normal soy sauce (Shoyu means soy sauce in Japanese) which you can find in any Asian market. The basics of Shoyu chicken is poaching the chicken in soy sauce and other ingredients. If you like teriyaki chicken the flavor profile is very similar. I have friends that use Teriyaki sauce in their Shoyu chicken recipes.

Hawaiian Shoyu Chicken image

Steps:

  • Combine all the ingredients (except cornstarch slurry, green onions and sesame seeds) in a large pot and bring to a boil over high heat.
  • Reduce to low and cook very slowly, covered, until chicken is tender, about 30 to 35 minutes more. Continue to skim the broth for fat and impurities.
  • Remove chicken to a serving platter. Strain the sauce and bring to a boil. Thicken with the cornstarch slurry, adding it very slowly to avoid any clumps to desired thickness.
  • Glaze over the chicken. Garnish with slices of green onion.
  • Suggestion: Save some of the sauce, it goes wonderfully over rice, the dish tastes better the second day -- ;-)
  • Serve with rice, and what the heck, mac salad! Onolicious!

1 lb chicken thigh, bone in, skin on
1 cup chicken broth
1/4 cup and 2 tblsp soy sauce (Hawaiian Shoyu)
1/4 cup brown sugar
4 garlic cloves, peeled and smashed
3 inches piece ginger, sliced 1/8 to 1/16 inch thick
1 tablespoon cornstarch dissolved in 1-2 tablespoons water, to make a slurry
1 -2 green onion (to garnish)
1 tablespoon toasted sesame seeds (to garnish)

This is a family fave and so easy to do! I like to serve it with brown rice, but you can put it over anything.

  • Combine pineapple juice, brown sugar and soy sauce; mix well.
  • Stir in chicken pieces, coating well.
  • Pour into crock pot and cook on low for 6-8 hours.
  • Serve over rice.

Steps:

  • Place the chicken breast halves in a dish with the 1 1/2 cups of teriyaki sauce. Cover and refrigerate 8 hours or overnight.
  • Preheat a grill for high heat.
  • Lightly oil the grill grate. Place chicken breasts on grill, and discard marinade. Cook for 8 minutes per side, or until juices run clear. Brush with the remaining teriyaki sauce during the last 5 minutes. When almost done, place one pineapple ring on top of each breast, and brush with melted butter.
  • In a small saucepan over medium heat, mix the brown sugar, soy sauce, pineapple juice, and Worcestershire sauce. Cook, stirring occasionally, until sugar is dissolved. Serve with chicken for dipping!

  • For the marinade, combine first 9 ingredients and mix well. Taste for seasoning, if too salty, add additional water.
  • To a ziplock bag, add chicken breasts and the prepared marinade. Squeeze out excess air and marinate for up to 24 hours. Discard marinade.
  • Prepare grill and cook slowly with indirect heat until fully cooked about 5-8 minutes depending on thickness. In the last few minutes brush with chili sauce for additional glazing or serve sauce on the side for dipping.

Steps:

  • Heat oven to 400*.
  • Mix hot water and butter in bowl. Stir in dry stuffing mix, pepper, half the pineapple and syrup.
  • Spoon stuffing evenly on chicken; roll tightly, secure with toothpicks. Place in 9 inch square pan with any remaining stuffing in center.
  • Mix remaining pineapple and syrup, sugar, vinegar and ginger, spoon over chicken. Bake for 30 minutes or until thoroughly cooked.

Steps:

  • Rinse chicken breasts, remove excess fat. Pat dry. Place in a baking dish.
  • Combine the glaze ingredients. Brush both sides of chicken breasts generously with glaze. Place skin-side up.
  • Bake at 375 for 10 minutes. Brush again on both sides with glaze. Turn skin-side down.
  • Bake 10 minutes, turn again and brush with glaze.
  • Bake 5 minutes or until chicken is no longer pink. (Make a small incision in thickest part of breast).
  • Serve hot from oven or at room temperature. Brush with additional glaze, if desired.
  • Tips: The skin can be removed from the chicken breasts if you are trying to lower calories.
  • Before turning chicken skin-side down, pour off any juices that collect in dish. This will allow a better glaze to form.

  • Mix together the soy sauce, brown sugar, ginger, sesame oil, and the juice drained from the canned pineapple. Reserve 1 Celsius of sauce for the pasta.
