NO BAKE CHOCOLATE HAYSTACK COOKIES
So good and easy to make! My siblings and I made huge batches of these cookies Sunday afternoons, and they were usually gone by Tuesday! The time for boiling the mixture is listed at 5 minutes, but if you cook it a little less, the cookies are chewier.

Steps:
- In a medium saucepan, combine sugar, milk, butter, cocoa (I tend to go a little heavy on the cocoa) and salt.
- Heat to boiling, stirring frequently.
- When it has reached a rolling boil, cook for 5 minutes, stirring constantly.
- Remove pan from heat and mix in vanilla, oats and coconut.
- Drop by spoonfuls onto wax paper.
- Work quickly!
- Let cool.
- Alternate/optional additions, add any one with coconut: 1/2-3/4 cup mini marshmallows or 1/2 cup walnuts.

Steps:
- Heat 2 inches of water in a pot to a simmer. Add the semisweet and milk chocolate to a bowl and place over the pot of simmering water. Allow to melt, stirring occasionally, 4 to 5 minutes.
- Meanwhile, add the noodles, almonds and pistachios to a large bowl and set aside.
- When the chocolate has melted completely, pour over the noodle and nut mixture. Mix until everything is well coated in the melted chocolate.
- Using 2 spoons, drop tablespoon mounds onto 2 parchment-lined baking sheets. Sprinkle the holiday sprinkles over the top. Allow to dry completely before storing, about 1 hour.
BUTTERSCOTCH HAYSTACKS
The fact that they are both delicious and extremely easy makes them a big winner in my book! Hope you like them, too! These would be a wonderful addition to a christmas cookie tray, or for fall school parties (if there are no peanut allergies in the class).

COCONUT HAYSTACK COOKIES
I hadn't had these in years until a friend of mine gave this to me. It's a pretty old recipe and you just don't see it much in cook books any more. They are super easy to make and so good to eat.

- Heat oven to 400 degrees.
- Mix sugar with salt.
- Mix sugar mixture with coconut.
- Mix in eggs.
- Butter one large cookie sheet.
- Drop by tablespoonfuls on cookie sheet and shape like small haystacks.
- Bake at 400 degrees for 15 minutes.
- Cool 5 minutes then remove from sheet.

- Before adding any spices to this recipe, if you have never had these before, you should make them plain like the recipe is first then decide if you want to add any thing else. We like them the way they are.
- You may be surprised at the flavor as they are.

Steps:
- Mix peanut butter, honey, banana, water and salt. Add rest of ingrediant and mix together. Form a ball using a tablespoon and press each ball together tightly. Place each ball onto a sprayed cookie sheet and bake at 350 degrees for approximately 20 minutes.

COCONUT HAYSTACKS
Steps:
- Preheat oven to 350 degrees F. Place the coconut in a single layer on a baking tray. Toast until golden brown, about 10 minutes. The edges will toast faster than the middle so stir coconut every couple minutes for even coloring.
- Melt the chocolate over a double boiler over hot water, making sure the bottom of the bowl does not touch the water. Remove the chocolate from the heat and whisk until smooth. Stir in the coconut. Using approximately 1 tablespoon per haystack, form the mixture into 1 1/2-inch tall stacks. Place them on a baking sheet. Refrigerate until set, about 30 minutes.
HAYSTACKS
I have made these cookies for my family for about 30 years now. My son (who is now 36 years old) gets so excited when I make these; he always enjoys them with a tall glass of milk. I find that I have to be careful when melting the butterscotch because it seems to scorch easily, so take care - this is an essential ingredient! Also, these are best enjoyed in the winter because they seem to melt and not taste as great in the warmer weather.

- Line a large baking dish with parchment or wax paper.
- Add the butterscotch chips, peanut butter, and coconut oil to a large microwave-safe bowl. Microwave on 50% power for 60 seconds, or until the chips are melted, stirring halfway through. Whisk until completely smooth.
- Add the chow mein noodles, peanuts, and pretzel sticks. Stir until evenly coated.
- Use 2 spoons to drop rounded tablespoons of the mixture on the prepared baking sheet. Place in the refrigerator and allow to harden for at least 1 hour.
- Make the chocolate coating, if using: Add the dark chocolate chips and coconut oil to a medium bowl. Microwave on 50% power for 30-45 seconds, or until the chips are melted, stirring halfway through. Whisk until completely smooth.
- Dip the bottom of each haystack in the melted chocolate, letting any excess drip off. Return to the baking sheet, then refrigerate for at least 30 minutes more, until the chocolate hardens.
