FROZEN STRAWBERRY DESSERT

My grandpa gave me many of my grandmother's and great-grandmother's recipes, including this frozen strawberry dessert, along with many wonderful stories about them. -Kate Murphy, Union Bay, British Columbia

Frozen Strawberry Dessert image

Steps:

  • Preheat oven to 350°. In a small bowl, combine the first four ingredients. Place in a 15x10x1-in. baking pan. Bake until golden brown, 18-20 minutes, stirring occasionally; cool on a wire rack. Set aside 1/3 cup for topping; sprinkle remaining nut mixture into a lightly greased 13x9-in. dish., In a large saucepan, combine the egg whites, 1 tablespoon sugar, water and cream of tartar over low heat. With a portable mixer, beat on low speed for 1 minute. Continue beating on low speed until mixture reaches 160°. Pour into a large bowl. Add strawberries, lemon juice and remaining sugar; beat on high for 8 minutes or until light and fluffy., In another large bowl, beat cream until stiff peaks form. Fold into strawberry mixture. Transfer to prepared dish; sprinkle with the reserved nut mixture. Cover and freeze for 6 hours or overnight.

2 tablespoons lemon juice
1 cup heavy whipping cream

Hazel's Frozen Strawberry Cake image

Steps:

  • Line sheet cake pan with 1/2 of crumbs.
  • Mix and cook until thick the eggs, butter, and powdered sugar.
  • Cool above mixture and add 2 teaspoons vanilla.
  • Spread over crumbs in pan.
  • Sprinkle one cup of chopped pecans over this.
  • Take 1/2 carton of Cool Whip and spread over pecans.
  • Add strawberries over all.
  • Spread remaining half of Cool Whip over all.
  • Sprinkle remainder of crumbs over Cool Whip.
  • Freeze.
  • Let thaw slightly before serving.

Frozen Strawberry Cake image

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch baking pan.
  • Mix flour, sugar, baking soda, and salt together in a bowl. Add shortening, sour cream, eggs, and vanilla extract and beat with an electric mixer on medium speed for 3 minutes. Fold in strawberries. Pour into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 40 minutes. Cool on a wire rack for 5 minutes. Run a table knife around the edges to loosen. Invert carefully onto a serving plate or cooling rack. Let cool, about 30 minutes.
  • While cake cools, pour reserved strawberry juice in a pan and bring to a boil. Mix water and cornstarch together and add to the juice; cook and stir until sauce thickens. Serve over cake.

  • Preheat oven to 350°. Line the bottoms of 2 greased 8-in. round baking pans with parchment; grease parchment., In a large bowl, combine cake mix, gelatin, sugar and flour. Add water, oil and eggs; beat on low speed 30 seconds. Beat on medium 2 minutes. Fold in chopped strawberries. Transfer to prepared pans., Bake until a toothpick inserted in center comes out clean, 25-30 minutes. Cool in pans 10 minutes before removing to wire racks; remove paper. Steps:

  • Preheat oven to 180 degrees.
  • Grease a deep 20cm round cake tin, line bse with baking paper.
  • Beat eggs and sugar in a bowl with an electric mixer until thick and creamy.
  • Fold in sifted flour and hazelnuts, pour into prepared tin, bake for 30 minutes or until golden brown and firm in the centre.
  • Turn onto wire rack to cool.
  • Combine ricotta, jam and strawberries in a food processor or blender, blend until smooth, but with still some strawberry chunks.
  • Cut cake horizontially into two, put ricotta mixture on bottom layer, place top on cake.
  • Dust top of cake with icing sugar on completion.

Refrigerated Strawberry Cake image

Steps:

  • Preheat oven to 350 degrees.
  • Flour and grease a 13x9 inch pan.
  • Prepare cake according to package directions.
  • Poke holes at 1" intervals with wooden spoon handle.
  • Puree strawberries in blender.
  • Evenly spoon strawberries over cake slowly, allowing pureed fruit to soak into holes.
  • Prepare pudding using only 1 cup of milk.
  • Fold in cool whip.
  • Carefully spread over cake after all fruit has soaked in (VERY IMPORTANT).
  • Place in refrigerator for at least 4 hours before serving.
  • Decorate with fanned berries and mint leaves.
