  • Grease 1 large loaf pan.
  • Cream margarine, sugar, eggs and vanilla.
  • Add dry ingredients, then bananas, nuts and sour cream.
  • Mix well.

  • Preheat oven to 300 degrees F (150 degrees C). Grease four 7x3-inch loaf pans.
  • Stir together 2 tablespoons white sugar and 1 teaspoon cinnamon in a small bowl. Dust pans lightly with sugar mixture.
  • Beat butter and 1 1/2 cups sugar with an electric mixer in a large bowl until smooth. Blend in eggs, mashed bananas, sour cream, vanilla extract, and 2 teaspoons cinnamon. Whisk together salt, baking soda, all-purpose flour, and whole wheat flour in a bowl. Stir flour mixture into butter mixture until just combined; fold in nuts. Divide into prepared pans.
  • Bake in preheated oven until a toothpick inserted in center comes out clean, about 1 hour.

Steps:

  • Beat sugar and oil.
  • Add eggs, bananas, sour cream and vanilla and blend well.

Steps:

  • Preheat oven to 375 degrees.
  • Spray a 9 by 5 inch loaf pan with butter flavored cooking spray.
  • In a large bowl, combine flour, dry pudding mix, baking powder and baking soda.
  • Stir in pecans.
  • In a small bowl, combine banana, undrained pineapple and sour cream.
  • Add banana mixture to flour mixture.
  • Mix until combined.
  • Evenly spread batter into prepared loaf pan.

I added dates and eliminated the sugar entirely, swapped out the white flour for whole wheat, and substituted grapeseed oil for half the butter. The result was a super moist loaf that was just sweet enough - the sweetness from the dates and bananas really shone through. It turned out so well I thought I would share.

Steps:

  • Grease a 9"x5" loaf pan.
  • Sift the whole wheat flour, baking soda and salt together.

You may use plain, or be adventurous and try vanilla, lemon, or your choice of flavors! Or go ahead and use sour cream if you wish. I even used part mayonnaise once in a pinch. For the nuts, use whatever nuts you wish. So here is the recipe,I hope you enjoy! I used to make this for the Colonial Pines Inn in Highlands, NC. It was always well received, and the customers could buy a loaf to take home, which they frequently did!

Healthier Yogurt Banana Bread image

Steps:

  • Grease one 5x9-inch loaf pan, or use 3 mini loaf pans. Some people even double the recipe and bake it in a bundt pan. Spray with cooking spray to coat pans.
  • Cream margarine, sugar, eggs and vanilla.
  • Add dry ingredients, then mashed bananas, nuts, and yogurt or sour cream. Add chocolate chips, if using. Mix well.
  • Bake at 350°F for 1 hour. If using mini loaf pans, cook for about 45 minutes. Enjoy!
