A great way to get your fiber and nutrients! You can make it up in big batches and portion it into small containers to grab and go in the morning. Adapted from Rachael Ray's Yum-O Family cookbook.

Steps:

  • Mix the oatmeal, milk, and 4 cups of water in a large, deep saucepan and bring to a boil over medium high heat. When it boils, quickly lower heat to very low. Stir in brown sugar, dried cranberries, flaxseed meal, sunflower seeds and salt. Cook at a low simmer for 15-20 minutes, or until very thick and creamy.
  • Stir often to prevent burning.
  • Serve with additional milk and sprinkle with a tablespoon of the Grape nuts cereal if desired, or cool and refrigerate to reheat later in the week.

Steps:

  • Preheat oven to 375.
  • Spray an 8 inch square pan with cooking spray.
  • Stir together oats, baking powder, salt and cinnamon.
  • Add sugar, an egg, 1 mashed banana, milk and vanilla. Stir just until combined.
  • Pour into prepared pan and top with a layer of sliced bananas.
  • Bake for 25 minutes.
  • Top with brown sugar and broil until golden. About 3-4 minutes, but watch it carefully!

  • Preheat oven to 325 degrees F.
  • In a large bowl combine oatmeal, cinnamon, nutmeg, sugar, salt and chopped walnuts.

Oatmeal Banana Bread image

Steps:

  • In a bowl, combine wet ingredients, eggs, honey, Greek yogurt, vanilla and melted butter.
  • In a separate bowl, mash the bananas and incorporate into the egg mixture.
  • In another bowl, combine together the dry ingredients, ground oats, old-fashioned oats, baking powder, baking soda and cinnamon. Pour dry ingredients into the wet ingredients, mixing together to combine. Do not over mix the batter.
  • Pour into prepared baking dish, smooth the top and bake at 350F (180C) degrees for 50 minutes.
  • Let it sit for 15 minutes, then remove from the baking pan and set aside to cool completely.

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Put the oats in a blender and pulse a few times until they start to resemble flour. Add the baking powder, chopped banana, maple syrup or honey, eggs and mixed spice or cinnamon, and whizz until smooth. Stir in the chocolate chips or berries.
  • Lightly oil four heatproof ramekins, then divide the batter between them. Bake for 20-25 mins, or until well-risen and the baked oats spring back when lightly pressed. Scatter with more chocolate chips or berries before serving, if you like.
