Steps:

  • In a large saute pan over low heat, add oil and butter. When butter is melted, add onions and saute stirring occasionally until golden brown and caramelized, about 35 minutes. Add shallots and some salt and saute for 15 minutes more until onions and shallots are dark brown. Remove from heat and let cool for 5 to 6 minutes, then chop into 1/4-inch pieces. Set aside to cool to room temperature.
  • Meanwhile, in a medium bowl, combine sour cream, mayonnaise, celery salt, Worcestershire, salt and pepper. Fold in onion mixture. Chill at least 1 hour or overnight, prior to serving.

  • In a sauce pan over medium-low heat, add butter or oil and melt. Add onions and sauté until golden brown and caramelinzed, about 25-30 minutes. Stir occasionally. If the onions seem to become dry add a teaspoon of water. Add in garlic and season the onions with 1/4 teaspoon of salt after the onions have been caramelized. Cook for another 3 minutes.
  • In a medium bowl, add the caramelized onion mixture to a bowl and stir in the remainder ingredients. Mix until all of the ingredients have been combined. Taste to see if the dip needs more salt and then cover the dip with plastic wrap and let sit in the refrigerator for at least an hour so the flavors can combine. Enjoy with chips, crackers or veggies!

  • Add the oil and onions along with a big pinch of salt to a very large sauté pan. Cook over medium heat, stirring frequently until onions caramelize into a deep brown color. This may take 15 to 20 minutes or more. Keep an eye on them towards the end and add a splash of water or wine if the onions start to brown too much.
  • Turn off the heat and stir in the Worcestershire sauce. Strip the leaves from the two sprigs of thyme and add to the onions. Transfer to a big plate to let cool.
  • In a bowl, mix the cooled caramelized onions and the Greek yogurt until blended. The caramelized onions will create a very appetizing ripple effect so don't stir too vehemently - those streaks of caramel look oh so pretty in the dip. Stir in several turns of freshly ground black pepper. Taste for salt. If you are planning on serving this with salted chips, be sure to use a chip for your final tasting so you don’t end up with too much salt in one bite. With veggie sticks, you can season the dip more liberally.
