HEART HEALTHY APPLE MUFFINS
Low-Cal, Low-Fat Yummy Apple Muffins. I saw this recipe on Food Network's Healthy Appetite by Ellie Kreiger. I figured i would post it since they only allow you to watch the video online.

Steps:
- Preheat oven to 400 Degrees.
- Peel and chop Golden Delicious Apple into Pieces.
- Squirt with juice of a half a lemon, to keep color.
- *Topping* Mix together: 2 Tablespoons Dark Brown Sugar, 1/4 Cup Pecans, and 1/2 Teaspoon Cinnamon. Set Aside.
- *Muffin Batter* Whisk together Dry ingredients: All ingredients from Whole Wheat Flour through Salt. Set Aside.
- Prepare Wet ingredients in a seperate bowl with a beater or in a mixer by adding in each ingredient one at a time as you beat or mix. Add in remaining ingredients from 3/4 Cup Brown Sugar through Vanilla Extract.
- *Combine* Add dry ingredients into wet, alternating with Buttermilk. Stir in Apples. Spray muffin tin with cooking spray and fill up each cup. Sprinkle with topping and bake for 20 minutes at 400 degrees. Enjoy. :).

- add milk, yoghurt and apple sauce.
- In a separate bowl combine dry ingredients and dried fruit.
- Add liquid to dry ingredients, combine with care.
- Spoon into muffin tins.
- Bake 180 C for 20 minutes.

Healthy, hearty breakfast muffins. These have a lightly sweet flavor and lots of wholesome ingredients to get your day started. Moist, chewy, and not overly dense. Easily customizable! You can use any flavor of yogurt, but I prefer plain Greek yogurt. Customize with your favorite nuts or seeds, zucchini or squash, cooked sweet potato, raisins or cranberries, etc. Enjoy!

- Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups or line with paper liners.
- Mix carrots, banana, zucchini, vegetable oil, yogurt, and eggs together until fully incorporated.
- Whisk flour and baking soda in a separate bowl. Mix brown sugar, oats, coconut, pecans, cherries, cinnamon, salt, and ginger into flour mixture until all ingredients are coated in flour. Stir wet ingredients into flour mixture until just combined. Scoop batter into the prepared muffin cups.
- Bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean and edges are slightly brown, 17 to 22 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

delicious healthy muffins even kids love... these are for those who like hearty, healthy & grainy foods. i prefer to bake them in a muffin top pan to make them more like a healthy cookie. we often substitute and use mini semi sweet morsels or mini m & m's instead of the fruit. adding the chocolate helps to get my husband and son to eat them. they are a tasty way to get your fiber. i hope you enjoy!

- bake 375 degrees for ~20min.
- (i undercook them and refrigerate uneaten muffins. then pop one in a toaster even when ready to eat and it cooks through without drying them out).

- Mix together flour, flaxseed meal, oat bran, brown sugar, baking soda, baking powder, salt (if desired), and cinnamon into a large bowl.
- Stir in carrots, apples, raisins (if desired), and nuts.
- Combine milk, beaten eggs, and vanilla.
- Pour liquid ingredients into dry ingredients.
- Stir until ingredients are moistened.
- Do Not over mix.
- Fill muffin cups 3/4 full.
