SPINACH AND CANNELLINI BEANS

This dish is very soothing, healthy, and yummy. You can use any white bean in place of the cannellini beans, and canned beans would work just as well as dried (no need for soaking and cooking).

Spinach and Cannellini Beans image

Steps:

  • Simmer the beans in water until tender, about an hour, and drain.
  • Fry the bread in 2 T of oil until golden brown, set aside.
  • Saute the onion in 2 T of oil until soft, add tomatoes and continue cooking over low heat.
  • Add the paprika and spinach and cook until the spinach has wilted.
  • Stir in the cannellini beans and season with salt and pepper.
  • Using a food processor (or a regular old knife and cutting board), mince up the garlic and fried bread.
  • Add to the spinach mixture, along with the water.
  • Cover and simmer gently for 20-30 minutes (adding more water if needed).
  • Serve with chunks of crusty bread.

Steps:

  • Preheat the oven to 400 degrees F.
  • Place the beans, garlic, lemon juice, 1/3 cup olive oil, and parsley in the work bowl of a food processor. Pulse until the mixture is coarsely chopped. Season with salt and pepper, to taste. Transfer the bean puree to a small bowl.
  • Cut each pita in half and then into 8 wedges. Arrange the pita wedges on a large baking sheet. Pour the remaining oil over the pitas. Toss and spread out the wedges evenly. Sprinkle with the oregano, salt, and pepper. Bake for 8 to 12 minutes, or until toasted and golden in color.

  • Mix all the ingredients for the spice mix. You can use ready ground powders however it's better to use whole spices, dry fry, and put through a spice/coffee grinder.
  • Fry the onion and garlic on a low heat in half the olive oil for 5 minutes. Once softened, add the spice mix and nigella seeds. Cook for a further 5 minutes before adding the beans.
  • Once the beans a fully heated through, add the lime juice, salt and fresh coriander and mash with the back of a fork.
  • Pour into a serving bowl and garnish with the remaining olive oil and a few sprigs of fresh coriander.
