HEALTHY TUNA MELTS

Quick and easy to make for lunch or dinner! My husband asked me to make him a tuna melt. I'd never eaten one (I don't like tuna except for grilled tuna steaks), let alone made one, so I tried this recipe from The Complete Cooking Light Cookbook. I've made this for him a few times now, and he says they're good! He's not big on English muffins so we normally use whole wheat toast instead.

Steps:

  • Preheat broiler.
  • Combine first 6 ingredients and spread 3 tablespoons of the mixture on each muffin half.
  • Top each half with 1 tomato slice and 1 tablespoon cheese.
  • Broil 5 minutes or until the cheese is melted.

1/3 cup celery, chopped
3 tablespoons light mayonnaise
2 tablespoons Dijon mustard
2 teaspoons lime juice
1/2 teaspoon fresh coarse ground black pepper
1 (12 ounce) can tuna in water, drained
4 English muffins, split and toasted
1 tomatoes, cut into 8 slices
2 ounces low-fat swiss cheese, shredded (about 1/2 cup)

  • In medium bowl combine tuna, onion, olives, tomato and parsley. Add olive oil and vinegar and toss to coat. Mound onto pita and top with feta cheese. Place under broiler and cook until cheese is melted. Serve hot.

Steps:

  • Preheat the broiler and set the rack about 4 to 5 inches from the heat source.
  • Spread the bread out on a baking sheet and toast. Spread the toasted muffins or bread with the mayonnaise, if using. Top with the Tuna Salad and then the shredded cheese. Place the baking sheet under the broiler and heat for 3 to 5 minutes, until the cheese has melted. Serve immediately.
  • In a small mixing bowl break up the tuna with a fork. Toss with the celery, onion, and parsley. Add the mayonnaise, mustard, and season with pepper to taste. Stir to combine. Add lemon juice, if using.

2 tablespoons prepared mayonnaise (optional)

1 cup shredded sharp farmhouse Cheddar cheese
Two 6-ounce cans white meat tuna packed in water, drained
2 tablespoons minced celery
2 tablespoons minced red onion, soaked in cold water for 5 minutes and drained
1 teaspoon minced flat-leaf parsley
1/3 cup prepared mayonnaise
1 tablespoon whole grain mustard
Freshly ground black pepper,
Freshly squeezed lemon juice, to taste (optional)

On the other side of four of the slices of bread, add one tablespoon whipped cream cheese. On the plain side of the remaining four pieces of bread, add cheese and 1/4 of tuna mixture. Place the whipped cream cheese covered slices face down on top of the tuna.
  • Heat a non-stick skillet to medium and spray with cooking oil. Working in batches (or as many sandwiches will fit on your skillet), add a sandwich to the skillet with the side that has the sharp cheddar face down. You want to give the cheddar as long as possible to melt. After about five minutes, or when the bread that's face down is golden brown, carefully flip the sandwich. Your tuna melt sandwich is done when both sides of the bread are golden brown, crispy, and cheese is melted on the inside.
