Herb Seared Sanddabs with Warmed Arugula and Fire Roasted Tomato Salad image

Steps:

  • To prepare the fish: Trim, rinse, and pat dry sanddab fillets and place in bowl. Mix white wine, garlic, olive oil, and lemon juice and gently toss with sanddabs. Cover and marinate for 30 minutes in refrigerator. Mix flour, salt, cracked peppercorns, and fresh herbs together and set aside.
  • To roast tomatoes and prepare salad: Seed 2 large fresh tomatoes, slice 1/2-inch thick, baste with olive oil, and grill over open flame. Cool and coarsely chop into 1/2-inch chunks. Mix together tomatoes, arugula, and tri-colored peppers, and set aside. Whisk together 1 cup olive oil, vinegar and honey, add salt and pepper, to taste. Heat dressing slowly in small saucepan and keep warm.
  • To cook the fish: Dredge marinated fillets in flour-herb mixture to coat completely. Brown butter in a skillet over medium-high heat and saute fillets for about 2 minutes per side. Remove from pan to individual serving plates and keep warm.
  • To serve: Toss salad with warmed dressing, arrange on top of sanddabs. Spoon small amount of remaining dressing around plate and garnish with lemon slices. Serve immediately.

12 (2 ounce) sanddab fillets (sole or flounder fillets may be substituted)
1/2 cup white wine
1/2 garlic clove, minced
1 tablespoon olive oil
1/4 cup fresh-squeezed lemon juice
1/2 cup flour
1 teaspoon salt
1 tablespoon fresh cracked peppercorns, medium-fine grind (pink, green, and black)
1/2 cup coarsely chopped fresh herbs, rinsed and completely dry (dill, thyme, basil, chives, parsley)
1/2 cup butter
1 cup grilled or roasted tomatoes, see recipe
1/2 cup extra virgin olive oil, plus extra for basting tomatoes
4 bunches fresh arugula, rinsed, with stems removed
1/4 cup finely diced sweet tri-colored bell peppers
2 tablespoons balsamic vinegar
1 tablespoon honey
Salt and pepper
1 lemon, thinly sliced

Herb Roasted Sweetbreads image

Steps:

  • 1. Remove the sweetbreads from the water and pat dry with a towel, season with salt and freshly ground pepper.
  • 2. Heat a pan large enough to hold the sweetbreads and the rest of the ingredients in a single layer.
  • 3. Add grape-seed oil to the pan and lightly sear the sweetbreads on all sides for about 90 seconds.
  • 4. Remove the seared sweetbreads from the pan and add the leeks, fennel, shallots, garlic, bay leaves, thyme, coriander seeds, and peppercorns. Cook over medium heat until soft without caramelizing, for about 4 minutes.
  • 5. Add the Noilly Prat to the pan, stirring up anything that may be stuck to the pan, then add the chicken stock. Simmer for 8 minutes on low temperature.
  • 6. Return the seared sweetbreads to the pan and, with the heat on low, gently poach them for about 12 to 15 minutes. Remove pan from the heat and allow the sweetbreads to cool in the cooking liquid.
  • 7. Once cooled, remove them from the liquid and reserve for portioning. Heat the cooking liquid and strain through a fine-mesh sieve, reduce the cooking liquid by two-thirds, leaving you with about 1 cup of reduced liquid. This will be the base for the sauce.
  • Directions
  • 1. Heat grape-seed oil in a saucepan over medium heat. Add shallots, garlic, golden raisins, and coriander seeds. Cook for about 90 seconds.
  • 2. Add the crushed grapes with the juices, bay leaf, and tarragon. Stir for about 90 seconds.
  • 3. Add the white wine and boil for 30 seconds to burn off the alcohol. Add the verjus and sweetbread poaching liquid. Simmer for 20 minutes.
  • 4. Strain through a fine-mesh sieve into a new saucepan. Add 1 tablespoon of butter and reduce until the consistency thickens and the flavor intensifies.
  • 5. Finish the sauce with chopped tarragon and minced shallots before serving.
  • To Finish the Sweetbreads:
  • 1. Have a heavy bottom saute pan heating up with enough grape-seed oil to cover the bottom.
  • 2. Season both sides of the cooked sweetbreads with salt and pepper and lightly coat with flour, shaking off any excess.
  • 3. Sear the sweetbreads on medium-high heat until golden brown and caramelized on all sides.
  • 4. Add a crushed clove of garlic, a sprig of thyme and a tablespoon of butter to the pan, allowing the butter to brown before removing the sweetbreads from the pan. Keep warm.
  • Assembly:
  • 1. Place the sunchoke ragout on the plate and put the sweetbreads on top.
  • 2. Arrange the braised radishes and peeled grapes on the plate, and then apply the verjus sauce.
  • 3. Finish the plate with the petite lettuces and shaved radishes.

4 tablespoons grape-seed oil

1 fennel bulb, chopped into one-inch pieces
3 shallots, chopped

16 ounces chicken stock
1 tablespoon grape-seed oil

1 bay leaf
1/2 bunch tarragon
1/2 teaspoon coriander seeds
1 cup green grapes, crushed by hand, keeping all juices
4 ounces white wine
8 ounces white verjus
8 ounces reduced sweetbread poaching liquid
1 tablespoons butter, unsalted
24 pieces of green grapes, peeled and stored in acidulated water
16 pieces of butter-braised radishes
1 cup small diced sunchokes, glazed with butter and chives
5 pieces of French Breakfast radish, shaved into ice water
Petite lettuces like mache, frisee or watercress

ARUGULA AND CORN SALAD WITH ROASTED RED PEPPERS AND WHITE BEANS

Canned beans can also be used in this composed salad with a base of sweet corn and pungent arugula. Since you don't need a broth for this composed salad, canned beans will work, though I always prefer the flavor of beans I've cooked myself. I like to use a white bean, either a cannellini or a navy bean. I've always loved sweet corn with pungent arugula. I combine the two for a salad bed, which I top with the roasted peppers and beans. So the dish is really two salads, one on top of the other.

Arugula and Corn Salad With Roasted Red Peppers and White Beans image

Steps:

  • Steam corn for 4 to 5 minutes, until just tender. Remove from heat, allow to cool, and cut kernels off cob. Combine with arugula in a large bowl.
  • Remove seeds and membranes from roasted peppers and cut in 2-inch strips. Place in another bowl. Add beans, chives and basil and toss together.
  • Whisk together vinegars, salt, garlic, mustard, and olive oil. Set aside 3 tablespoons of the dressing and toss the rest with beans and peppers. Season to taste with salt and pepper, and allow to sit for at least 15 minutes and for up to 3 days (in the refrigerator).
  • Toss remaining dressing with arugula and corn. Line salad plates or a platter with arugula and corn mixture. Top with peppers and beans. Garnish with shaved Parmesan, and serve.
