GARLIC AND HERB CAULIFLOWER RICE

Garlic and Herb Cauliflower Rice image

Steps:

  • Cut the cauliflower into large florets. Transfer to a food processor, in batches if necessary, and pulse until the cauliflower resembles rice. Pour into a medium bowl. You should have 3 1/2 to 4 cups of cauliflower rice.
  • Heat a large nonstick skillet over medium heat. Add the ghee and garlic; cook, stirring, until the garlic is golden and fragrant, 1 to 2 minutes. Next, add the cauliflower rice. Cook, stirring often, for 5 minutes. Once the cauliflower rice has softened and is lightly golden, remove from the heat and season with salt and pepper. Stir in the 3 tablespoons dill, 2 tablespoons chives, and 1 tablespoon parsley. Taste and add more salt and pepper, if desired.
  • To serve, scoop the cauliflower rice into a shallow bowl and garnish with more herbs and black pepper.

1 small head cauliflower
2 to 3 tablespoons unsalted ghee
2 cloves garlic, grated
Kosher salt and freshly ground black pepper
3 tablespoons chopped dill, plus more for garnish
2 tablespoons minced chives, plus more for garnish
1 tablespoon finely chopped flat-leaf parsley, plus more for garnish

HEALTHY CAULIFLOWER RICE

Cauliflower can shine in many forms. This recipe shows how simple it is to turn the florets into a healthy, low-carb meal or side dish--our version has only about 1/4 of the carbohydrates in rice. With the olive oil and browned onions, the cauliflower has enough flavor to satisfy by itself, and it can also be a base for stir fries, beans and rice or anything else you would eat with rice.

Healthy Cauliflower Rice image

Steps:

  • Trim the cauliflower florets, cutting away as much stem as possible. In 3 batches, break up the florets into a food processor and pulse until the mixture resembles couscous.
  • Heat the oil in a large skillet over medium-high heat. At the first wisp of smoke from the oil, add the onions, and stir to coat. Continue cooking, stirring frequently, until the onions are golden brown at the edges and have softened, about 8 minutes. Add the cauliflower, and stir to combine. Add 1 teaspoon salt, and continue to cook, stirring frequently, until the cauliflower has softened, 3 to 5 minutes. Remove from the heat.
  • Spoon the cauliflower into a large serving bowl, garnish with the parsley, sprinkle with the lemon juice and season to taste with salt. Serve warm.

  • Fit a food processor with the coarse shredding disc; process cauliflower. You should end up with about 4 cups. Transfer cauliflower to a paper towel–lined rimmed baking sheet and press another layer of paper towel on top to blot any moisture.
  • Heat butter in a large skillet over medium. Once butter begins to foam (or oil is hot), add scallions and jalapeño and cook, stirring occasionally, until scallions are softened, about 5 minutes. Add cauliflower, give pan a shake to combine, and cover. Cook, shaking pan occasionally, until cauliflower is tender, 5–7 minutes. Toss in ⅓ cup chopped cilantro; season with salt and pepper.

  • Using a food processor, cut the head of cauliflower into medium chunks and remove the core. Working in batches, add the cauliflower to the bowl of a food processor and pulse until the cauliflower is broken down into very small bits that resemble rice. Do not do all at once or it will be mush and whole in other parts.
  • Add the almonds to a large skillet over medium heat. Stir the almonds around the pan until they are fragrant and lightly toasted, about 3 minutes.
  • Return the skillet to the burner and add the butter. When the butter is melted and bubbling, stir in the garlic. Cook the garlic, stirring until fragrant, about 30 seconds.
  • Add the cauliflower rice, salt, and a few pinches of black pepper. Cook, stirring until the cauliflower rice is crisp-tender and starts to turn light brown in places, 7 to 10 minutes.

  • RICE CAULIFLOWER (and BUTTERNUT SQUASH if using): Wash cauliflower and pat dry well. Cut into 2 inch chunks. You will need to process cauliflower (and squash) in 2-3 batches. Place chunks in bowl with regular chopping blade. Pulse until cauliflower is small rice size. Repeat until all cauliflower (and butternut squash) is riced. Note 3. If riced cauliflower feels moist, pat dry with paper towels to remove as much moisture as possible. I almost never have to do this.
