Steps:
- Preheat the oven to 425 degrees. Heat the butter in a small skillet and add the onion and garlic. Cook until wilted, and cool briefly.
- Place the meat in a mixing bowl and add the bread crumbs, nutmeg, Tabasco, cumin, salt and pepper. Add the onion mixture, herbs of your choice and yogurt, then blend well. Pack the mixture into a loaf pan about 9 by 5 by 3 inches. Smooth the top with a spatula.
- Set the pan in a baking dish and pour 1 1/2 inches of boiling water around the pan. Bake for 45 minutes.
- Let rest in a warm place for about 15 minutes before serving. Serve with the mushroom sauce.

MINI MEATLOAVES WITH MUSHROOM-HERB ORZO

- Preheat the oven to 425 degrees F and line a rimmed baking sheet with foil. Pulse the bread with half of the mushrooms in a food processor until fine; transfer to a large bowl. Add the beef, egg, 1 tablespoon parsley, the paprika, Worcestershire sauce, 1/2 teaspoon salt and a few grinds of pepper. Mix with your hands until just combined. Form into four 3-by-4-inch mini meatloaves; transfer to the prepared baking sheet. Bake until browned and cooked through, about 15 minutes.
- Meanwhile, bring a medium saucepan of salted water to a boil. Add the orzo and cook as the label directs. Reserve 3/4 cup cooking water, then drain the orzo.
- Slice the remaining mushrooms. Heat 1 tablespoon olive oil in a large nonstick skillet over high heat. Add the mushrooms and cook, undisturbed, until they just start browning, 2 to 3 minutes. Stir in the sage and season with salt and pepper; cook until the mushrooms are tender, 1 to 2 more minutes. Stir in the orzo.
- Remove the skillet from the heat and stir in the remaining 3 tablespoons parsley and 1 teaspoon olive oil. Gradually add the reserved cooking water as needed to loosen; season with salt and pepper. Drizzle the meatloaves with the yogurt and sprinkle with paprika. Serve with the orzo.

- In a large mixing bowl, combine ground meat, minced mushrooms, bread crumbs, onion, ketchup, eggs, and salt and pepper. Mix well. Spread 1/2 of the mixture into the bottom of a loaf pan. Arrange 6 whole mushrooms stem down into meat. Top with rest of meat, patting to combine both halves.

- In a large bowl, beat eggs, milk, ketchup, salt and pepper. Add beef and mix well. - Preheat the oven to 325 degrees F (165 degrees C).
- Melt butter in an oven-safe skillet over medium-high heat. Stir in mushrooms and a pinch of salt; cook and stir until mushrooms begin to brown, about 5 minutes.
- Stir in fresh rosemary. Add flour and stir to coat the mushrooms; cook and stir for about 3 minutes.
- Whisk in beef broth, 1/2 cup at a time, whisking constantly to prevent lumps.
- Turn heat to high and bring the sauce to a simmer. Simmer a few minutes until sauce starts to thicken. Season with salt and pepper to taste.
- Remove from heat and stir in heavy cream.
- Slide prepared meatloaf into the sauce. Spoon sauce over the top of the meatloaf.
- Bake in the preheated oven until no longer pink in the center, about 1 1/2 hours. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
- Remove pan from the oven and gently remove meatloaf to a serving platter.
- Skim off any extra fat from the surface of the sauce.
- Bring the sauce to a boil over medium-high heat to reduce until thick, about 5 minutes.

TUSCAN MEATLOAF WITH MUSHROOM SAUCE
I found this recipe on another site I stumbled onto. Original recipe was from the NY Times magazine. I was drawn to the photo and then the recipe. I made a few changes to make it more everyday cook friendly even though I stayed with the shape and cooking process. Once cut and sauce poured on top, it will look and taste of gourmet quality. - In a bowl, break up the 1 lb of beef with a fork.
- In a small bowl, combine the 2 T milk and bread, and mash until creamy. Add the milk and bread to the meat.
- Add the onion, salt, pepper, prosciutto, cheese, and garlic. Mix thoroughly by hand.
- Mix in the lightly beaten egg.
- Shape meat into a firm, round ball; then roll this into a salami-like loaf about two and a half inches thick. Tap with your palm to drive out any air bubbles.
- Roll the loaf in the bread crumbs until evenly coated.
- Chop the mushrooms roughly and set aside.
- Whisk 1 T dry white wine in the tomato paste and set aside.
- Heat the butter and canola oil in a Dutch oven or heavy casserole pan just big enough for the meat.
- Brown the meat on all sides in the pan over medium heat after the butter foam subsides.
- Add the wine. Increase heat to medium high. Boil wine briskly until reduced one half, turning meat carefully once or twice.
- Turn heat to medium low and add chopped mushrooms. Add the tomato paste to the meat and mushrooms.
- Cover and cook at a simmer for 30 minutes, turning the meat once or twice.
- Carefully remove meat to a cutting board. Allow it to cool slightly and settle.
- Cut into slanted slices about 3/8 of an inch thick.
- If the sauce seems thin, concentrate it by boiling rapidly for a few minutes. Pour a little sauce on a warm serving platter, arrange the meat slices, then cover the remainder of the mushroom sauce.

- In a skillet, heat oil on high. Saute the mushrooms; onion and garlic. Add tomatoes, tomato paste, salt, pepper and sugar. Remove 1-1/2 cups. Add water, bay leaf and basil to skillet. Simmer, uncovered, for 45 minutes, stirring occasionally. , Meanwhile, combine all meat loaf ingredients with 1-1/2 cups reserved sauce. press into a 9x5-in. loaf pan lined with waxed paper. Unmold onto a roasting pan. Bake at 350° for 45 minutes or until no pink remains and a thermometer reads 160°. Remove from oven; drain. Spread 1/2 cup of herb sauce over top of meat loaf. Return to oven for 15 minutes. Discard bay leaf and serve remaining sauce over individual servings.

- In a large glass measuring cup, soak the porcini in the boiling water until softened, about 20 minutes. Drain the porcini, reserving the soaking liquid. Rinse them briefly, pat dry and finely chop. Let the porcini soaking liquid settle, then pour it into a medium bowl, leaving the grit behind.
- Preheat the oven to 350°. In a medium skillet, melt 2 tablespoons of the butter. Add the onion and cook over moderately high heat, stirring, until translucent, about 5 minutes. Add the garlic, chopped porcini and 2 tablespoons of the reserved porcini soaking liquid and cook over moderately low heat for about 5 minutes. Stir in the rosemary, thyme and sage and scrape the mixture into a large bowl; let cool.
- Soak the bread in the remaining porcini liquid until evenly moistened, then squeeze dry and tear into small pieces. Reserve the porcini liquid for the gravy. Add the soaked bread to the large bowl, along with the ground beef, veal and pork and the ham and eggs. Season with 1 tablespoon of kosher salt and 1 teaspoon of black pepper. Knead the mixture with your hands until combined. Transfer the meat to a large enameled cast-iron baking dish or a small flameproof roasting pan and pat it firmly into a 10-by-6-inch oval loaf.
- In a bowl, mix the mayonnaise with the mustard and cayenne and brush it over the meat loaf. Bake for 1 1/2 hours, or until browned and firm to the touch. Using 2 large spatulas, transfer to a cutting board, cover loosely with foil and keep warm. Set aside the baking dish.
