You need only a handful of ingredients for Ina Garten's Oven-Fried Chicken recipe from Barefoot Contessa on Food Network; buttermilk keeps the meat extra moist.

- Place the chicken pieces in a large bowl and pour the buttermilk over them. Cover with plastic wrap and refrigerate overnight.
- Preheat the oven to 350 degrees F.
- Combine the flour, salt, and pepper in a large bowl. Take the chicken out of the buttermilk and coat each piece thoroughly with the flour mixture. Pour the oil into a large heavy-bottomed stockpot to a depth of 1-inch and heat to 360 degrees F on a thermometer.
- Working in batches, carefully place several pieces of chicken in the oil and fry for about 3 minutes on each side until the coating is a light golden brown (it will continue to brown in the oven). Don't crowd the pieces. Remove the chicken from the oil and place each piece on a metal baking rack set on a sheet pan. Allow the oil to return to 360 degrees F before frying the next batch. When all the chicken is fried, bake for 30 to 40 minutes, until the chicken is no longer pink inside. Serve hot.

- Preheat the oven to 400 degrees F. Set a rack on a foil-lined baking sheet. Spray the rack generously with cooking spray.
- Finely grind the bagel chips and cereal together in a food processor. Transfer the crumbs to a gallon-size plastic bag. Add the oil, salt, cayenne, paprika and ground pepper and toss to mix thoroughly. Whisk the light mayonnaise and Dijon mustard together in a medium shallow bowl.
- Add the chicken to the mayonnaise mixture and turn to coat all the pieces evenly. Drop the chicken into the plastic bag, seal and shake until each piece is evenly coated. Place the coated pieces on the prepared rack. Spray the chicken pieces evenly with cooking spray.
- Bake until the coating crisps and browns and an instant-read thermometer inserted in the thickest part of the pieces registers 160 degrees F, 35 to 40 minutes.
- Transfer to a platter and serve hot or at room temperature.

- Place chicken breasts and buttermilk into a large resealable plastic bag, knead several times to coat chicken with buttermilk, and squeeze air from the bag. Seal and refrigerate at least 1 hour.
- Preheat oven to 400 degrees F (200 degrees C).
- Placed crushed herb-seasoned stuffing mix into a shallow bowl. Mix flour, salt, and black pepper in a separate flat dish. Beat egg with water in a bowl. Pour peanut oil into the bottom of a 9x13-inch baking pan.
- Remove chicken from buttermilk, shake off excess buttermilk, and discard used buttermilk marinade. Dredge chicken breasts in seasoned flour. Dip each floured breast in egg, then press gently into stuffing mix to coat. Place coated chicken breasts into the pan with peanut oil.

- Place flour in a shallow plate or bowl and season with salt and pepper to taste. Put the bread crumbs in another shallow plate or bowl and beat the eggs in another bowl.

- Rinse chicken; BUT don't pat dry.
- In a plastic bag; combine cornflake crumbs with all the seasonings.

- In a shallow dish, mix together the buttermilk, garlic, 1/2 teaspoon of the salt and the oil.
- Place the chicken pieces in the buttermilk mixture and coat them thoroughly.
- Marinate the chicken in the buttermilk mixture overnight in the refrigerator.
- Preheat the toaster oven to 425°F.
- In a food processor, mix the oats, red pepper flakes, the remaining 1 teaspoon salt, Parmesan, and basil.
- Pulse until the oats are partially powdered.
- Alternatively, mix the ingredients together in a bowl with a wooden spoon.
- Place the oat mixture on a plate.
- Shake any excess buttermilk off the chicken and dredge to coat each piece thoroughly.
- For easy clean-up, cover the toaster oven baking tray with aluminum foil and lightly spray it with oil. (Check your manufacturer's instructions, however, for any cautions against the use of aluminum foil in your toaster oven.).
- Place the chicken pieces on the tray so that they are not touching one another.

- Remove the chicken from the toaster oven and serve hot or refrigerate and serve cold over a salad.
OVEN-FRIED CHICKEN THAT'S AS GOOD AS FRIED
Steps:
- Adjust rack to upper-middle position and heat oven to 400 degrees F.
- Mix eggs, mustard, thyme, salt, and pepper in a shallow dish. Put Melba toast crumbs in another shallow dish. Set a large wire rack over an 18 by 12-inch foil-lined jellyroll pan.
- Using 1 hand for dry ingredients and the other for wet, lay chicken pieces, 4 at a time, in egg mixture, roll to coat. Then lay 1 piece at a time in Melba crumbs. Press a mix of crumbs into top of chicken. Turn piece over and repeat, pressing crumbs into other side. Gently shake off excess.
- Set chicken on rack. Spray top portion of chicken pieces evenly with oil. Bake until chicken is nutty brown and juices run clear, 30 minutes for drumsticks and 35 minutes for thighs. Serve immediately.

- Combine all coating ingredients in 9-inch pie pan. Dip chicken in buttermilk, then in coating mixture.

- Sprinkle chicken with thyme and marjoram. let stand for 30 minute to 1 hour.
- Roll in flour and fry in hot fat or salad oil just long enough to brown on both sides.
- Remove and place in baking pan.

- Pour water into frying pan and stir thoroughly scraping bits from bottom of pan.

- Fried Chicken:.
- Place chicken in a shallow glass dish.
- Whisk buttermilk, yolks and poultry seasoning in a bowl. Pour over chicken.
- Cover, and refrigerate for 4 hours.
- Mix flour, thyme, sage, and basil in a bowl.

- Whisk in broth over heat, and simmer for 10 mins., or until thickened and smooth.
- Melt butter in saucepan. Add onion, garlic and paprika, and saute until onion is softened.
- Add wine, and cook until reduced by half.
- Whisk in broth mixture, and simmer 5 minutes
- Strain sauce.
- Add cream and cilantro.
- Season with salt and pepper.
- Keep warm until serving.
- Makes 2 cup sauce.
